My first experience tasting this special dish was at Canton Restaurant owned by Chef Kang.

My family fell in love with this dish.

Ingredient and Portion
1 to 2 large egg plant (wash, cut into medium slices)
1 packet of crispy pork floss (you can keep the balance for go with bread)
Batter Mixture:
1 cup all purpose flour
1 teaspoon baking powder
Half teaspoon of sea salt
1 egg
1 cup milk with cold water
Method
Towel dry egg plant slices
Dipped egg plant slices into batter
Coated well and deep fried till lightly brown and fluffy.
Drain them on a paper towel.
Coat the deep fried slices with a generous amount of crispy pork floss.
Serve while hot.
