Song of India is a popular Indian restaurant along Scotts Road that has redefined authentic Indian cuisine because of their flavourful and well-presented dishes. One of these is the Malvani Jatra, which Chef Manjunath has gladly shared with OpenRicers. It's so easy to prepare, even those with no real experience in the kitchen can whip it up in no time!
Ingredients:
4 pcs Ikan kurao Fish thin slice (2 inch slice)
1/4 tsp Turmeric
1/2 Chilly powder
2 tsp Ginger garlic paste
1 tbsp Lime juice
Salt, to taste
2 tbsp Flour
1 Egg
1 cup Japanese bread crumbs
Oil for deep fry
For topping:
2 Tiger prawn, finely chopped
1 tbsp Oil
1/2 tsp Cumin seeds
1 tbsp Onion (chopped)
T tbsp Tomato (chopped)
1 tsp Red chilli powder
Salt, to taste
A pinch of Turmeric powder
1 tsp Fresh coriander leaves
2 tsp chopped Red bell pepper
2 tsp chopped Green bell pepper
Steps:
1.Prepare the marination by mixing turmeric, chilly powder, salt, flour, egg, ginger garlic paste and lime juice to a smooth paste.
2.Now apply the marination to the fish then coat each fish with the bread crumbs evenly.
3.Heat oil , deep fry the fish pieces till golden brown , keep it aside.
4.For topping, heat oil in a pan before adding the cumin seeds.
5.When it crackles, add the onion and sauté for 2-3 min. After that, add the tomatoes and sauté for 2 minutes on medium flame.
6.Now add the red chili powder, turmeric and the chopped prawns. Sauté for another 3-4 minutes, add salt , pepper, and the chopped coriander. Mix it well.
7.Put this mixture on top of the fried fishes evenly and garnish with coriander leaves. Serve hot.
