8 Nonya Dishes to try in August | OpenRice Singapore

Newly opened restaurant, The Clifford Pier and award-winning cookbook author Shermay Lee have one thing in common – A strong desire to preserve and honour local cuisine. Naturally, a collaboration between both parties made perfect sense. And it comes just in time for National Day too. Starting today, you’ll get to enjoy a special month-long menu featuring eight published and unpublished Nonya recipes that Shermay inherited from her late grandmother, Mrs Lee Chin Koon – author of Mrs Lee’s Cookbook and respected doyenne of Peranakan cuisine in Singapore. Priced at $23++, each dish comprises one protein, one starch and a waterfall of rich gravy, brimming with familiar flavours that most of us grew up with. Just like our Grandma's

Recreated for this limited period are some of the late Mrs Lee’s signature dishes like Lo Kai Yik, which are braised chicken wings served with kangkong vegetables in a rich taucheo gravy, as well as a creamy and flavourful Ayam Lodeh with lontong and Ayam Bali (pictured above). The latter is simmered in chilli sauce with added sweetness from kecap manis, not forgetting the decadent rempah mix on top. Editor's Pick A must-try from the menu – Colonial Bacon-Wrapped Chicken, marinated in Chinese wine and soy sauce and accompanied with puffy-fluffy potato balls made from mashed potatoes and egg white – light and within minutes, out of sight. Don’t miss the Nonya Chicken Curry with Roti Jala either. The coconut chicken curry uses Shermay’s secret family recipe and comes with five pieces of roti jala, a lacy pancake made with a crepe-like batter using a special tool that’s hardly available in Singapore now.
