
The brewery where the magic happens
As early as 8am, brewers Scott Baczek and Hayman Tkm can already be found at The Pump Room Microbrewery, Bistro and Club to start the task of brewing beer. A long and tedious process which usually takes about 6 to 8 weeks, it’s definitely worth the wait as soon as you have a sip of that cold beer drink you’ve waited for.

“Brewing is art as well as science,” explains Baczek. Science is important because of all the processes the ingredients go through to create the alcohol content. But you can’t just rely on that to come up with a great-tasting beer. It’s up to the brewer to tweak the process and come up with unique flavours we all enjoy.

The different types of malted barley used in the brewing process
Beer brewing starts with the malted barley, the ingredient which is responsible for the alcohol content. The more barley in the mixture only means higher alcohol content for the beverage. The barley is then ground to grist before the brewer mixes it with hot water. It is important to let it settle for about an hour to let the starch content convert to sugar.
Once this is done, the liquid is separated from the grains and moved to a kettle. It is then boiled for 60 to 90 minutes. Another important ingredient, hops, is then added to the liquid to give it its bitter flavour and distinct aroma. The mixture, which is known as wort, is then placed in a device which separates the remaining solid particles.
After this, the liquid is cooled down to fermentation temperature. This usually ranges between 10 to 20 degrees Celcius, depending on the type of beer you are brewing. When it has cooled down, yeast is added before it is stored in a vessel to begin the fermentation process. During this period, the yeast eats the sugar and together with the carbon dioxide, creates the alcohol content.
