($26). The refreshing ingredients of green asparagus, spring lettuce, and juicy diced tomatoes beautifully complement the natural, woody saltiness of the smoked fillet. Exquisite Alba black truffle dressing is drizzled over this light starter as a subtle, rustic finishing touch to the dish.
Rainbow Trout Carpaccio
