Heeded friend's advice & arrived shortly before 5pm to beat the dinner crowds. Hawker centre was busy but at least it was easy to find clean vacant table near the popular claypot rice stall. Unusual practice here is to pay up upon ordering - $6 for single person portion of chicken claypot rice. Pay 1st practice is presumably to preempt customers who got tired of waiting for their claypot. Was given a set of chopsticks, sliced chilli etc to bring to my table. What was supposed to be 15-20min turned out to be half an hour. Thank goodness for HP games. Claypot rice finally arrived & its delicious aroma wafted into the air when the server removed the lid. Promising! The rice was topped with big pieces of chicken, dried shitake mushroom cut into quarters, some sliced Chinese sausaged & a big stalk of green leafy veg. (Portion is sufficient for 2 small eaters.) Scooped up the toppings onto the plate provided & used the sesame oil & dark soya sauce to customise the rice to my taste. This stall's claypot rice passed the taste test with flying colours ~ the rice was fluffy & was infused with the earthy flavours of the oils from the Chinese sausage, the chicken was cooked just right & not dried out & most important, there was a layer of crispy charred rice at the base of the claypot. It is this fragrant, wafer cracker-like layer of rice that is the hallmark of excellent claypot rice. Lesser cooks won't be able to churn out claypot rice with this layer of rice crust. continue reading
