Born and raised in Hong Kong, the cradle and epitome of haute Cantonese cuisine, he believes that a good balance of wok hei – the unique fresh-out-of-the-wok flavour – is the soul of a dish, as well as the key to differentiation between good and exceptional Cantonese food.
