8-Course Hokkaido Kaiseki Menus from 6 Feb to 6 March
Fancy a taste of Hokkaido’s fresh and exceptional seafood produce? Then see to it that you head over to Pan Pacific’s renowned Japanese restaurant, Keyaki, which will be presenting three new eight-course kaiseki menus highlighting the prefecture’s finest seasonal delicacies from now till 6 March 2015.
Available for both lunch and dinner, the prix fixe menus, Hokkai, Donnan and Hakodate, range from $160 to $190 and are artfully crafted by Chef Hiroshi Ishii, who translates the delicate harmony of Hokkaido’s beauty into his culinary presentations comprising dishes of well-balanced flavours and textures.

Our favourites from the Hokkai menu include the assortment of tuna, botan shrimp and surf clam sashimi served fresh on a bed of crushed ice, as well as a trio of sushi featuring uni, hotate and a glorious handful of ikura pearls – both sure to delight sushi and sashimi lovers out there.
And adding some heat to the meal was the Ishikari Nabe, a heartwarming salmon miso hot pot traditionally served during the winter months in Hokkaido. A harmonious pairing of land and sea produce presents itself in this dish, where salmon, seasonal vegetables and Hokkaido potatoes are simmered in a savoury miso broth.
Other dishes on the menu include Grilled Kinki Fish, which bears a smoky aroma and crisp skin to contrast its delicate and succulent meat, Snow Crab Tempura and Grilled Scallop with Egg Yolk Sauce.
