New Gourmet Offerings at Forest 森 and Tangerine

While one side of Singapore’s food scene is dominated by the humble hawker fare, the other sees celebrity chef restaurants teasing our taste buds. Resorts World Sentosa is home to a few of such dining spots, namely Forest森 and Tangerine, helmed by Chef Sam Leong and his wife Forest Leong respectively, which have each rolled out new menus in recent weeks.
At Forest 森, Chef Sam Leong’s modern take on Chinese classics is portrayed in a brand new lunch menu, which holds the reins of the restaurant every Sunday from 12 pm to 3pm. At $68++ per person, you will get to choose from four specially crafted 8-course set menus from a variation of 13 appetizers, mains and desserts. Some highlights include:
The Baby Abalone with Sichuan “Ma La” Sauce comes as a flavourful duo combination platter with a Wok-fried Crispy Duck Pressed Confit, cooked with yam and served in mushroom sauce. The former is a tangy chew set to warm up those taste buds, while a crisp exterior embalms the mash of duck and yam in a cube for the latter. We couldn’t resist swiping up every last bit of that mushroom sauce so trust us, you would too. Possibly the healthiest point of the menu, the Steamed Salmon sits in a clear and unsuspecting broth that surprises you with extra zing thanks to the ginger flower, lemon and kaffir lime leaves infused into it.
Take a dip in sinner’s pool with the Slow-cooked Wagyu Beef Cheek, dusted with cumin powder and encircled by a black truffle sauce. With every bite, the fat oozes out unforgivingly along with the locked-in juices in the wagyu. Our advice: Think of nothing and simply enjoy it. Your carb quota arrives in a pair with Chef Sam Leong’s Wok-fried Japanese Pearl Rice with Squid Ink, accompanied by seared Hokkaido scallop smeared with XO chilli sauce for extra flavour. Together, the celebrity chef couple runs the award-winning spa restaurant Tangerine, which serves healthy and nourishing dishes created alongside ESPA’s in-house nutritionist. Expect Cantonese and Thai influences here and there, as well as other Asian fusions that Chefs Sam Leong and Forest Leong have incorporated along the way. Each item on the menu is labelled and tailored to match the four different lifestyle retreats at ESPA – namely Fit for Life, Weight Management, Intro to Detox and De-stress.
For those who gather cravings for a good chip and dip combo, the Organic Crispy Rice Cracker with Minced Pork & Shrimp in Peanut Sauce is the one to go with. The peanut sauce is sweet, nutty and peppery – a debatably better and more savoury counterpart to peanut butter on a cracker. And if you #eatclean, the Cured Atlantic Salmon in Granny Smith Apple & Celery ‘Juice’ will be worthy of your attention. Fresh and clean on the palate, it gives those on the Weight Management treatment a good energy boost as a substantial appetizer.
With Chef Sam Leong’s Cantonese influences, of course the menu couldn’t do without a tasty soup like the Doubled-Boiled Canadian Wild Morel Mushroom with Sakura Chicken Consommé, which is high in iron and potassium and low in calories. Fortunately for fellow dessert lovers, healthy eating at Tangerine doesn’t rule out one of our favourite segments of a meal. Absolutely sin-free, the Chilled Aloe Vera, Rosella Gelo & Calamansi makes a perfect touchdown to end any lunch or dinner with its refreshing take and the use of natural sweeteners.
