For this year’s seasonal hairy crab season, the star dish at Peony Jade is the Sea Salt-baked Hairy Crab in Golden Pillow (S$68++) – an endearing crab-shaped bread crust created by General Manger of The Quayside Group Mr Robert Han, with an entire hairy crab encased within that aromatic fluff. Also notable is a cocktail serving of steamed scallop with hairy crabmeat, egg white and spinach broth. The three layers sit distinctly apart, yet it comes together as a harmonious mix of flavours when the flaky fresh hairy crab meat meets the silky smooth body of egg white at the base.
