The Australian chef of Sri Lankan descent presents Seafood from the Heart - an extensive range of seafood served in modern ways to elevate the rustic, local flavours of Sri Lanka. Renditions include the Modern Prawn Kottu(above), lightly garnished with roasted coconut shards, garlic chips and peanuts.
Featuring six live cooking stations at the kitchen table, you can expect specially curated dishes served in unique cooking styles. From the King Tiger Prawn Tortelli to Mussels Aglio Olio(above), feel free to customise the pastas to suit your palate.
What’s a Sri Lankan seafood buffet without curry? Featuring one of our favourite dishes, the fragrant Snapper Curry complemented with condiments such as tamarid puree, coconut sambal and oven roasted tomatoes.
Finish off the meal with a huge selection of sweet treats at the desserts bar, which is stocked with an array of macarons, cakes, apple crumble and puddings.
