Ujong’s Brand New Menu | OpenRice Singapore

Ujong at Raffles Hotel recently received a new menu direction, steered by newly-appointed Group Executive Chef Mark Richards. With over 40 dishes – double the previous variety – to choose from, you can now enjoy sharing portions of signature mains like Long Xia Chao Fan (wok fried rice with lobster) ($22) and Assam Pedas Ikan Pari (spicy Malay skate wing) ($22).

Some dishes you can expect from the ‘Street Eats’ section of the menu include Chee Cheong Fun with Foie Gras ($18) and Pandan Chicken ($18). The former is a flavourful mix of the subtle traditional cheong fun (rice roll) and the tasty richness of homemade foie gras sauce. The dish is also topped up with crispy foie gras and sesame seeds. The latter brims of aromatic pandan flavour, adding on to the complex flavours.

A classic Singaporean dessert favourite to try is their homemade Ujong Mango Pudding ($12). Chef Mark Richard’s recipe includes pomegranate, mint, crispy dried mango and a secret ingredient. We loved the unique texture of this tangy treat, which were more paste-like than the usual smooth pudding. Set Lunch Specials For just $20++, savour a three course meal for lunch on weekdays from 12pm to 2pm. Expect appetizers like Spicy Szechuan Soup as well as mains of Gong Bao Cuttlefish and Black Pepper Beef Fried Kway Teow. End off your meal with either a traditional Puloh Hitam or a bowl of Bubur Cha Cha to complete. Do note that the set menu changes on a monthly basis.
