I could eat Lao Ban's smooth soymilk jelly all day, everyday. Lighter than the traditional soyabean curd that has to be eaten hot or warm to best appreciate its texture, Lao Ban's chilled soymilk jelly is easier on the palate in sunny hot Singapore. I like its soft silky texture and how smoothly it glides down my throat. Even a toothless geriatric or a baby weaning off the milk bottle can swallow it. My favourite version still comes from Stall No 51 at Old Airport Road Hawker Centre, a few doors away from Lao Ban's first outlet as it is just a little less sweet. Same silky texture and comforting creamy melt-in-the-mouth texture for both stalls. Lao Ban's version is a wee bit sweeter than 'Stall 51' so it may well be preferred by the majority.
