This process of porridge cooking was separated from the cooking of Bak Kut Teh soup which includes the use of premium white pepper. Minced Meat with Meat Ball porridge was naturally flavoured and spiced then. With the used of anchovies, the porridge was sweetened. Meat Ball was bouncy and friendly to the jaws. Since I'm a minced meat lover, it would be great to have an increased portion on that.

The color of the tea was eye catching as time passed, from the faint orange red into beautiful pink. Diffusion took place under the constant heat from the candle which gave the Tea more powerful flavour from the assorted fruit and flower. Preparation method for porridge is similar to minced meat with meat ball porridge, just that the ingredients was pork ribs instead. Porridge had more water content as compared to the earlier pot. A good point to note was that the meat was thoroughly cooked and fell off from the bone easily.

Pig Organ Soup has its soup base similar to pork ribs soup and served under the burning fire, The peppery concoction includes, lean meat, liver, intestines and you can even get to taste the garlicky flavour in the soup! Having too much of pork, it was good that we have Dry Bak Kut Teh with Chicken Cubes. The selling point was not only its chicken cubes but also its shredded cuttlefish that gave a strong aromatic hit once it landed onto our table. Sauces used in the dish includes dark and black sauce. If you dont know, this dish also consist of Bak Kut Teh Soup Base. Dry Bak Kut Teh is also available with Pork Ribs too.

Some called it the 4 heavenly king! Overall, A-One Bak Kut Teh is a good place where you can enjoy Singapore iconic dishes. In such a strategic location where business parks and hotels are in the surroundings, it gives foreigner a feel of how our local dishes taste like.

Having been to most their claypot houses in Singapore, I would say their meals are fulfilling and close to a heart of Singaporean.

To achieve the taste of bak kut teh, they uses premium white pepper to derive the stock before combining with pearl rice and simmered in high pressure cooker for 45mins. This is the reason why the peppery flavour is so prominent.

A total different soup base from the one used in preparing the porridge but the one similarity got to be the fiery peppery flavour. Nonetheless, the pork ribs were rather tender and to my surprise the soup taste less pepperish when cooled down.

Includes items like pork, beancurd skin, beancurd puffs, eggs and peanuts. This dish definitely reminds me of kway chap. Slight disappointment as the pork are not tender enough and other than the peanuts, the rest seems to have not been braised long enough with the gravy making it a little lacking the braised feel.

In this outlet it also offers Bak Kut Teh Porridge which marry 2 dishes together : Bak Kut Teh and its well known claypot porridge. The porridge uses stock made from high graded white pepper, which has been brewing for more than 3 hours since morning. The white pearled rice is cooked with the stock using a pressure cooker for 45 minutes, until the rice is almost broken.

The dish is served with a garlic chilli sauce, which kind of reminds me of the McDonald's type. Different from the usual kind of chilli paste. I am a bit disppointed that there is no braised pig's intestines and braised duck in serving. It would be better if there the items have braised longer. The peanuts are not soft enough, while the pork belly do not have a melt in the mouth texture. Threfore a bit hard to eat with its rich layers of fats.

Although it is modeled against the well known KL version of yong tau foo, I personally feel that the taste is far cry from the actual stuff. The sauce is a bit too heavy, lacking of the hint of sweetness that assoicated with the ampang yong tau foo's sauce. The stuffed yong tau foo such as fried bean stick, beancurd skin, fried wanton, brinjal, tau pok, lady’s finger, bitter ground, and chilli is served on a bed of kang kong with the sauce poured over. The dish is served with a sambal chilli paste which I feel is a bit too salty.

The pot of Flower and fruit tea comes with a warmer.It comes with a little glass cup for you to sip if things get too peppery.The longer the flowers and fruits stay in the pot ,the tastier it is. finish everything,don't waste the tea.

Let's start with the Claypot Porridge, followed by the soup, braised dishes, and so on..

Minced Meat with Meat Ball Porride ($9.90 )
Teochew people knowns for their dishes of Teochew Porridge. It is the same as what the porridge being served at A-One : Well Known Teochew Porridge. The poridge was really great and peppery ! Literally melts in my mouth.
It is a watery porridge which is a bit of dry concept. The main delightful of its porridge is because they are using a Bak Kut Teh stock to prepare its delicacy. Cooking time takes about 45 mins thru a high pressure cooker with a mix of white pepper.

Pork Ribs Porridge ( $10.90)
Cooking concept is the same as Minced Meat Porridge. It is using white pearl rice and bak kut teh stock with a good combination of pepper, garlic, and spices. So, what makes its porridge different from the above is : it is more watery based porridge beside the pork ribs ingredients. Though the ribs was quite tender and fresh but i still prefer a dry based porridge so that i could taste the delicacy of porridge.

A-One Claypot Porridge was really SHIOK when the soup is still hot and the peperry stock is definitely melts your delight.

Pork Ribs Soup ($10.90)
After the porridge, now it is time for Bak Kut Teh ! Well the soup is same as porridge, it is peppery ! But don't be mixed up with Bak Kut Teh stock that served in porridge, This dishes is cooked in complex broth of herbal and spices, with a pleasant thick dark brown broth color as this is what tradition delicay Bak Kut Teh was introduced. The meat is supposed to be tender, but it is not. It would be a good complement dishes, if the pork ribs tender. Well ! The best time to eat Bak Kut Teh is always to have You Tiao (fried dough ) there !

Pig's Organ Soup ($9.90)

Using a Bak Kut Teh Peppery soup, same as pork ribs soup it needs 3 hours to done the broth. In the early morning like 6 am / 7 am  they already prepare to cook the broth to its A-One standard. The fire was lighted on spot on the table. Doesn't it looks like steamboat feast ?? LOL. It is a good serving concept quality to preserve the food hot. The porky broth comes with liver, pig intestines, and pork slices. I don't eat liver so i am sorry to exclude out liver. Pig intestines are the most liked ! It is tender and meaty to eat.

Not forgetting about drink ! Assorted Fruit & Flower Tea ($7.90 )
Thank You A-One Bak Kut Teh to give a surprise drink ! A wonderful floral fragrance of non sugar tea. The dried fruits and flowers are brewed into the pot, giving a sweet taste of tea though it is sugarless. Recommended to its special drink it. The tea has Chinese Hawthorn tea, which has slight sourich touch that very good for digestion.

Braised Platter ( $ 14.90 )
Perfect braised platter of a tender bite. These dishes consist of pork, beancurd skin, beancurd puff, egg, and peanuts which have been simmered in a dark light soya sauce throughout a herbs ingredients.

Ampang Yong Tau Foo 
It comes with 3 size : Small ( $9.90 ) ; Medium ($14.90 ) ; Big ($18.90)
Do you know what is Ampang ? You have visited Malaysia, KL guess you know Ampang is one of the LRT station. I have never tried any of the Ampang taste before.

But so far, Its Homemade Ampang sauce is well served with the dishes yong tau foo dishes - beancurd skin, fried wanton, crispy tau foo, brinjal, tau pok, lady’s finger, bitter ground and tonnes of kangkong at the bottom drenched in Ampang gravy. Other than, Porridge and Bat Kut Teh, it is one of the dishes that people say "Should try the Ampang Yong Tau Foo.

Dry Bak Kut Teh Chicken Cubes ($12.90)
As far as the concern of Bak Ku Teh all are from Pork, now let's change to Chicken.  A-One offered a Tender Chicken Bak Kut Teh Cubes which is still maintained the consistency of using Bak Kut Teh stock. Premium stock that being cooked together with dark soya sauce, dry chili and slices of cuttlefish makes the sweet, mild spicy gravy simmered into the dishes. They could improve on its gravy to make it more characteristics as i found that it is a bit too watery. As usually if the gravy is creamer would taste nicer

Assorted Vegetables in Sambal Sauce ( $10.90)
The assortment of greens -  lady's fnger, long bean, egg plant, sweet pea, big ikan bilis are stirred with fried mince meat and sambal sauce. Saying that it is cooked with a sambal sauce which supposed to be oh well the fragrant ! but i didn't really taste the sambal sauce. It is too light and not spicy.

All cooked with their signature Bak Kut Teh (BKT) stock recipe, which uses high grade white pepper for boiling and simmering for hours, they have churned out many BKT themed dishes, some of which we tried when we visited. Some were less peppery, some were more fiery.

Under the dishes cooked with their bak kut teh recipe, I liked the good ol' Pork Ribs Soup ($10.90) which was peppery. I also liked that the tender meat which was easy to remove from the bone.

Take the meat and dip it into their dipping sauce mixture: Sweet black sauce, chopped garlic and chilli padi. The taste is awesome.

I am a lover of Pig's Organs Soup. Surprisingly, if you order their Pig's Organs Soup ($9.90), they also cooked it with a less peppery version of their BKT stock. However, I can't say this is my favourite, because the peppery taste takes away the essence of the soup, somewhat.

Like usual popular A-One porridge in other branches, the porridge here is cooked with pearl rice, which makes the porridge smooth, with softer grains. Both porridge is cooked with BKT stock for 45 minutes, using high pressure cookers.

Meat lovers, you can try the dry BKT Chicken Cubes ($12.90) and the Braised Platter ($14.90).

The Dry BKT Chicken cubes are interestingly similar to the Kung Pao chicken dish. But for their rendition, they used their BKT soup base to cook it. It's fragrant, with addition of thinly sliced dried cuttlefish.

The Braised Platter, on another hand, is similar to the assorted braised items that you would go with your kway chap. While the gravy is flavourful, I was a little bummed out that they didn't include pig intestines in this dish. Both dishes are great with rice.

For the Ampang Yong Tau Foo, it comes in 3 sizes: small ($9.90, medium ($14.90) and large ($18.90). Ours was the medium sized one, good for 2 - 3 pax.

The assorted vegetables feature, what A-One likes to call, the 4 'heavenly kings' of vegetables, namely: Sweet peas, eggplant, ladyfinger and long beans.

Overall, it is interesting that they have come up with this concept where most things can be cooked with a signature bak kut teh stock, but the control of the BKT flavour - more fiery, spicy, peppery or BKT prominent - are just a thin line from being different.

Hopefully, they have mastered controlling the flavours for various Bak Kut Teh dishes, because there must be an edge to the various dishes even if it is BKT themed. Importantly, flavours need to be kept consistent for its returning BKT loving customers.
