The spread was rather wide - ranging from the usual breakfasty stuff such as pancakes, yogurt, assortment of pastries, crispy bacon, hash brown , ham and cereal etc. The pastries were crispy and fluffy - fresh, and tasty.
Then there were fruits, congee with ingredients on the side, eggs, baked beans, array of juices and some noodles. We had a rather balanced brunch, I must say.
The food was good, and the music was soothing. The service crew was rather courteous, hence it made the dining experience awesome.
Breakfast pricing per pax is SGD$23.00 for Continental delights and SGD$30.00 for American - go for the latter, there's more variety.

The Raspberry flavoured Grand Marnier and "Guanaja" Chocolate Christmas Yule Log Cake is a comfortable partnership of flavours but I wished the Grand Marnier flavour could be more pronounced. Nonetheless, the texture of the chocolate mousse is astoundingly velvety, just like the excellent Panna Cotta which I had previously at Pontini.

Freshly made on the spot, the golden waffles with crisp browned edges and a tender, not-too-sweet interior is also worth a spot in the limited stomach space. Highly flexible to go along with any savoury ingredients like smoked salmon or sweet creamy ice cream. The colourful spread of sushi that they have. They don't have my favourite salmon sushi though.

I had a handroll too. We can choose the ingredients that we want at this live station. The chef was very humourous. He said if we wanted everything in one handroll, he could do it for us too! Haha...

Outdoor Barbecue Station (Charcoal-Fired Grill)

We don't normally see barbecue station in other typical high-tea buffet but be warned, this area was really like a burning furnace, very very hot here! Need to "suffer" a bit for your BBQ chicken wings, sausages, sweet corns and satay!

A nice group photo with Miss Tam Chiak (Maureen)! Being the host of the event, she was seldom at her seat as she was busy going around to interact with her guests. Hope to have a chance to meet up with her again.

The duck is a red meat and the little carbohydrate is used to allow diner to finish it. The dessert served was chocolate pistachi mille-feuille sauterned wine jelly with Berries compote and lemon sorbet. A good meal is completed with little glass of wine and with chocolate. That is a wonderful combination of the menu.

This is actually the first visit by The Little Devil and Chubby Botak Koala to Cafe Brio's. Grand Copthorne Waterfront Hotel actually hold a special meaning to us, because this is the hotel where we had our wedding reception. Unfortunately, due to the overwhelming activities, alcohol during the reception and entertaining the guests, we did not manage to spend any valuable time here 8 years ago. (Darn, have we been married for so long???)

So enough of my rumblings and fumblings, let's get to the food. The first thing that you notice when you enter into Cafe Brio's is actually the spread of the desserts (international and local), followed by fresh shellfish, then sushi and sashimi.

The shellfish here consist of oyster, prawns and mussels. The size of the shellfish are quite big and fresh. Next come to the sashimi section, with selection of salmon, tuna, yellow tail and cuttlefish. The sashimi are as fresh as they get, with a good portions of the cuts. The minus side are the selections are quite limited.

During the night, the roast station churn out roast beef. It is tender and roasted to medium, where you can still see the pink meat in the centre. It is tender however the gravy is lack of flavour. The Indian food section is something that you can't miss, especially the briyani and beef rendang. The basmanti rice is full of flavour and the rendang is succulent to the point of melting in your mouth. To complete our selections of main dishes, we have finished it with their famous crayfish laksa. We personally find the laksa quite average. The gravy lack of presence and not as robust as it suppose to be. There is nothing pretty special about it, except it is serve with half potion of a crayfish.

So finally come to the desserts, where the selection from hot to cold desserts are so extensive, they can actually just do a buffet for their desserts. I like their Pineapple upside down cake, where it is moist and light; Manggo Pudding, Rose Syrup Aloe Vera, Apple Jelly Panna Cotta shots are light and refreshing. For chocolate lovers like me, the Chocolate Pudding with custard sauce or ice cream is just heavenly if you like something heavy, while chocolate fondue with fruits is the alternative for something light. There are also some Peranakan desserts if it is to your liking.

Service here is actually good. The service staff clean the plate regularly and top up your drinks. We actually went using the Deal.com promotion, so it is actually value for money for us. However, if you are paying a full price, it will be slightly overpriced.

Overall, Cafe Brio's presents an quality spread of buffet to the patrons. The food quality are of high standard, we do hope they can expand the buffet spread, especially on their sashimi and shellfish to the extend of their desserts range. Cheers!!!

The buffet at the hotel is awesome, get blown away and if i'm not wrong, they change their theme of the buffet from time to time. You'll be shocked (surprisingly shocked) by the waiters/waitresses as they're really attentive to your needs, like we wanted to find a place to put our umbrella and bags and they just automatically pushed the chairs over (even though they were standing quite a distance) and mind you, their chairs are no restaurant chairs (SO HEAVy).

in a buffet, try everything, or else don't eat a buffet.

3) Beef Salad - Found in the cold cuts section, the small cuts of beef with a nice red center makes a light tasty treat.

4) Potato Soup - I liked the sour finish.

5) Tempura Prawn - The slim prawn had a slight sweet finish, although this was slightly marred by the pepper on the batter.

6) Honey Chicken - This well marinated dish is a must try for chicken lovers. However, avoid if the chicken has been sitting there too long as the skin gets a little on the tough side.

7) Desserts - I liked that the cakes are in small portions that allow me to try a variety. I did not like the taste of the items in the shot glasses as the sour and sweet just did not mix.

Overall, the food was good.

Had our dinner at Cafe Brio on a Friday night.
It was my first time to Cafe Brio and I was absolutely impressed by the buffet spread they offered.

Seafood Spread:

Oysters, Snow crabs, Tiger prawns, Scallop, Mussel, Sashimi - none of them failed my expectation.
The oysters and snow crab especially! Extremely fresh and they were the highlight of the whole dinner.

Cooked Dishes:

They offered quite a wide variety of cooked dishes but I think I only managed to tried one or two. (Spoilt for choices)

Satay Chicken and Redang Beef - All were quite okay.

Grilled:

Lamb Chop, Tiger prawns, Squids, Steak, Otah: Taste is quite average. I think the cold dishes are much more better.

Desserts:

Quite limited selections but I do find some quality one such as their Waffles.
It was really light and crispy. Topped with a little Banana caramel topping, it would make an excellent dessert!

Service:

I was blown away by the service staff as they were really attentive and prompt in clearing the dishes & refilling your water.
They even fold your napkins back neatly while you are out pilling more food!

Overall

I think its one of the better hotel buffet around.
Ideal for seafood lover, but perhaps not for desserts nibble.
