我在香港也常吃潮州菜,来新加坡体验下星洲版的潮菜。餐厅环境很cozy 传统,挂了开店时的古董餐牌和几幅不错的水墨画。餐厅服务周到,店员nice,老板给我们悉心的配菜建议,听我在香港常吃潮菜,便介绍了两地做法的不同,还拿出他镇店的百年柠檬和耗时9天的秘制金橘给我们看(据说香港湾仔某知名富豪饭堂老板还来过他店里取经带走柠檬和金橘)1.汤菜是手捶牛肉丸汤。非常新鲜的手打牛肉丸子,Q弹有嚼劲,汤里有咸菜和豆芽,是清汤,非常鲜美。推荐2.前菜是潮州冷盘四拼,鲨鱼冻很特别,鱼鲜Q嫩;虾丸鲜香有口感3.主菜#煎焖马友鱼尾,配葱姜冬菇丝普宁豆酱汁。鱼肉鲜嫩无比,入口即化,唇齿留香。非常推荐。#清壶天双鹅,双拼卤鹅和烧鹅。卤鹅卤香味十足;烧鹅表皮是挂浆的脆皮,肉是咸鲜口味(老板专门强调是炉火烤制,非电烤)。和在内地与香港吃的卤鹅烧鹅风格非常不同,值得一试。#椒盐九肚鱼 比香港的炸得更干香,还加了炸蒜头辣椒碎等调料,是新加坡本地人喜欢的重味风格#大芥菜焖冬菇豆皮,标准的斋菜口味4.主食是菜脯芥兰烙粿条。外皮焦香,内里粿条劲道,菜脯和芥兰颗粒感十足,口感层次丰富。是我吃过最好吃的粿条菜式。必点。5.甜点:#招牌水晶金橘白果芋泥,这是我吃过最赞的中式甜品,卖相堪比fine dinning的出品, 口感一流。原本甜腻boring的芋泥里加了秘制9天的金橘,非常清爽,白果糯香,还有马蹄粒提升口感。绝对是费功又费心的必点甜品。#水晶包,馅儿是黑豆做的,甜度刚好,豆香味浓,比平时吃的红豆类的包特别#返沙银芋条 比香港做的精细用心,芋头软糯,居然加了芹菜汁增香,也让外皮的糖霜没有那么腻总之,这家传承三代的餐厅菜式传统美味,制作考究不马虎,有工匠精神,下次来新加坡还可一刷! continue reading
