I believe the xiao long bao needs no more introduction, it is afterall what they are famous at. The xiao long bao skin is very thin and the soup in the xiao long bao is really tasty and flavourful. The meat is also juicy and fresh. It is still one of my favourite places to have xiao long bao.

Din Tai Fung was brought into Singapore after Breadtalk Group won the franchise rights. The group also won the franchise rights to operate Din Tai Fung in Thailand. Currently, there are 14 Din Tai Fung branches in Singapore.

I visited the Din Tai Fung branch at Raffles City Shopping Centre (which is just next to City Hall MRT station) on a Saturday evening. As usual, there was a crowd waiting outside the restaurant waiting for their numbers to be called (this is a norm during weekdays too).

For those who have never been to Din Tai Fung, here's a tip. There is no need to queue, instead you should approach the counter, inform the service staff how many person you have and get the order form (with the queue number written on it) from the staff. After that you can fill in the form, according to the dishes you would like to order. You should also ask what is the estimated waiting time. If the waiting time is long, you can consider walking around before coming back to check if your queue number has been called.

Although the restaurant had a considerably large sitting capacity, the place was full. We waited half an hour before our queue number was called. Simple, clean yet classy ambience. In addition, I like their open kitchen concept. Its great to see how the chef prepare our food!

Its great that they had Chilli, Vinegar, Soya Sauce, pepper and toothpicks on every table. It makes it so convenient for customers and at the same time, free up some bandwidth for the serving staff to concentrate on other things. Win-win situation. Crystal Jade use to provide these at every table too. However during a recent visit to their Plaza Singapura outlet, I noticed that they had removed them.

The Oriental Salad in Special Vinegar Dressing $3.50 was superb! It is my favourite appetiser at Din Tai Fung! Whenever I patronise Din Tai Fung, I am definitely order this! It's made of seaweed, beansprouts, strips of spicy bean curd and rice vermicelli. The ingredients are then mixed and tossed in their special vinegar dressing. It's very refreshing and addictive as each ingredient gives a different texture and flavour. A must order.

The Steam Pork Dumplings aka Xiao Long Baos (XLB) $6.80 (6 pcs) are one of Din Tai Fung's signature dishes. The XLB were filled with pork fillings and rich and tasty juice. Although the skin of the XLB was wafer thin, it was able to hold the juice. Each piece of XLB is wrapped with a minimum of 18 exquisite folds. Do handle the XLB with delicate care to avoid breaking the skin. In addition, be caution not to scald your mouth when the hot juice ooze out. The XLB are best eaten with ginger slices and vinegar.

The Fried Rice with Shrimps & Eggs $10.80 is another of my favourite dish! It was executed perfectly. You would be amazed to find out that the it consisted of just rice fried with shrimps, eggs and spring onions.

The shrimps were fresh with sweet succulent flesh. Each grain of rice was well coated with flavour from the egg, spring onions and shrimps. In addition, they did not stick to one another and was not lumpy. Kudos to the chef for his skills (heat control, timing and frying).

The partner ordered the Special Braised Beef Noodle Soup with Beef Brisket $11. The beef soup was incredibly rich and well flavoured. However, the beef meat was disappointing. Several big chunks of beef meat were given. Although the meat were well flavoured, they were too tough and chewy. To put it simply, it was hard biting through the meat. Moreover, certain pieces had a thick layer of fat on it.

What I thought was amazing was that Din Tai Fung has so many branches in Singapore. Yet, somehow they manage to maintain the consistency of the food across all their branches. No matter which branch you patronise, the food taste the same! Not an easy feat to achieve. Although the Special Braised Beef Noodle Soup with Beef Brisket was a let down, the rest of the dishes were perfect! I will certainly be back for more!

The seafood rice was as always big enough for 2. There were generous prawn toppings on the rice. Plus, it went well with the soup we ordered. The crab xiao long bao tasted like chilli crab. it was quite spicy and the soup was very warm.

I have to say the chilled sliced pork & shaoshing wine marinated chicken are somewhat a novelty. While the style in which the century eggs & crispy pork chop were prepared is no wonder DTF commands such following & patronage worldwide.

We had ourselves the; pork XLB, crab roe XLB, steamed shrimp & pork dumplings, steamed chili crab & pork buns. The piping hot XLB with succulent juicy goodness wrapped within the translucent skin has to be ranked up high for craftsmanship. The art of eating XLB involves an acquired skill, failing which, shall have yourself a scalded tongue.

With your chopsticks gently pick it up & put it in your soup spoon (add shredded ginger julienne if you like the prickle sensation)
Prick the XLB skin to let the juice flow & you sip it slow
Assess the temperature before u gobble it

Next to be rolled out were our noodles, zha jiang mian, pai gu tang mian, jiang you mian. Quite honestly, we didn’t witness if the noodles were handmade, but I’d say the texture comes with a light spring to every bite, rather familiar with the hand made sobas in some Japanese joint.

To end the meal off, we were presented complementary yam XLB for desserts.

We ordered the Xiao Cai which is like those China style with beansprouts and other vegetables and for me and my sister who is not a fan of vegetables tried it too but only in a small portion. It is good as an appetizer to start the meal and glad that it was our first dish.

We have the famous Xiao Long Bao but this time Daddy called for something different. We usually have with meat to prawn and well, it tastes as great as I love prawn and something unique. My sister disliked it as there are small vegetables in it but it tasted as great for me and Daddy that we wanted to order another plates of it.

The juice bursts into my mouth as usual and have the shiok feeling while my sister felt only scalding as she put one entire Xiao Long Bao into her mouth too fast.

Well, I have the free flow hot jasmine while they had soft drinks which were more expensive that normal retail prices but well that is understandable. Still preferred hot jasmine as it is free-flow, cheaper and probably healthier too.

Their service was good as they refill the moment I was about to finish everything despite the crowd. Just that the speed of serving the dishes might be a little slow as we are all hungry waiting for 1st dish. It wass worth waiting for good food anyway.

The environment is clean, food are mostly great and service are nice. It is recommendable and I was surprised with voucher I just need to top-up only $20+! Overall they are clean as they are wearing masks for hygiene.

The Xiao Long Bao comes in 10 pcs... Juicy and tasty especially with the stew inside the dumpling. It has been said that it takes a special skill to make the XLB... Tasty but clearly not the best that i have tasted. Maybe it is due to overwhelming response so anyways, it is pretty goood for me.

The service is good and i actually put my chinese speaking knowledge to good use. They were pretty jovial about it but they were pretty Okay and served us quite well....

Ah, the place where I tried my first Xiao Long Bao and never looked back! The dumplings skins are so thin that it's a wonder how they manage to contain the soup, speaking of which is so tasty and hot that I usually burn my tongue in my first few bites. I also enjoy the Fragrant Pork with Crushed Garlic, the refreshing taste of cucumber complements the savoury pork and the garlic rounds it up as the perfect appetiser!

I was pretty impressed with din tai fung's xiao long dao. I did a little experiment with my girlfriend, we wanted to see how much pressure applies by the chopstick will cause the xiao long bao to burst. As any other branch of Ding Tai Fung, xiao long bao serves here are good as always, never fail to satisfy my craving for taiwanese food.The pork filling is juicy and the xiao long bao tasty soup always served at a temperature which allowed immediate consumption. The new item - Smoke Duck spring roll is good, always order 2nd serving as we love it so much. The chinese pickled salad is memorable.Overall, food was good as usual, and service is efficient. It is one of the nicer chinese restaurant.
