This stall has a variety of deep fried dough fritters ranging from You Tiao, Butterfly Bun,Salted Hum Jin Peng and Red Bean Hum Jin Peng. A sumptuous snack isn’t just a popular breakfast item but also a Singaporean comfort food.These variety of dough fritters are freshly made.You Tiao resembled long, savory doughnuts aka Crisp Chinese cullers by my ex-American bosses.Butterfly Bun is my favourite and its craveworthy. These buns are fried with sesame seeds which gave an extra fragrant similar to You Tiao except that its takes a different shape and slightly sweeter in taste. Nowadays the butterfly buns seemed to have taken a different shape.Used to be slightly rounder. Recently, I noticed the You Tiao are not so crispy but still very light and fluffy. Maybe for health reasons, not too much of alum powder was added to the preparation. Alum powder is a chemical component that makes the outside of the dough fritters crispy.The boss from the photo was kneading, rolling and folding the dough preparing for a new batch of You Tiao.Over these years, he still look the same.It is best to eat these deep fried dough immediately when its freshly done.Each fritter cost 70 cents.They also cater for customers who would like to cook their own cuttlefish paste You Tiao. He specially prepare a separate batch just for this purpose.Customers may have to wait around 10 to 15 minutes during weekends and public holidays. continue reading
