Located in the iconic Fullerton Hotel, Jade is beautifully decked out in regal hues of gold and silver. It simply looks like no expense has been spared to make this place look as opulent as it can be.
We tried the Restaurant Week set lunch which allowed us to sample a good variety of dishes at this fine dining Chinese restaurant for only $40++ per person. Aligned with Singapore Restaurant Week’s theme “Feasts of the Ocean”, Jade’s menu focuses on seafood.
Awake your taste buds with Secret of the Deep Sea, a platter of 4 appetizers. From left to right, there’s Poached Scallop and Seaweed Dumpling wrapped in chewy skin accompanied with piquant preserved vegetables, followed by perfectly fried Crispy Prawn with Spicy Sesame Dressing. This is certainly a welcome twist from the common wasabi dressing pairing. My vote goes to Jade’s rendition of the well-loved fried shrimp dim sum. Moving along, is a well-played creation of silky Steamed Squid Ink Tofu with stir-fried squid and crispy sesame tuile. The final item, Deep-fried Foie Gras Salmon Roll in Sweet Vinaigrette with pops of Tobiko, was rather disappointing as the former’s presence was rather faint.
The main dish, Steam Crab Roe with Sautéed Sliced Grouper, sits in a pool of robust XO chilli sauce. Take a bit of everything in one spoon and let it mingle in the mouth. Yummms!
Carbs can never be absent in a Chinese meal! Jade’s Simmered Ee-fu Noodles are flavoured with truffle, then topped with sliced abalone and morel mushrooms. Its hard to go wrong with that distinctive woody aroma of truffle, which added an umami punch. I’m not a fan of the foam though, as its texture was too dense.
Sweet endings, Breeze At Sand Beach, was a visual treat. I can see this being a hit with kids too! This is the most innovative dessert presentation I’ve come across so far at a Chinese restaurant, where the last course tends to be an afterthought. Shaved Coconut Ice and Mango Puree, a classic combination, takes centre stage. Its accompaniments, chewy Coffee Dumpling,Butter Cookies and Sago Custard Ball lie on a bed of biscuit crumble.
On the whole, this was a satisfying meal. Jade’s service deserves a mention too-it was flawless and attentive.

I attended a wedding some time back at Fullerton Hotel, and the chinese cuisine from Jade Restaurant. The first dish was a combination platter, with octopus, jellyfish, and some fried stuff like cuttlefish ball, quite an appetizing dish. The second was the abalone soup, wasn't too flavourful. Next we had the asparagus with scallops and mushrooms - the scallops were fresh and the whole dish wasn't salty or oily. The fish was very fresh and meat tender. I have long heard of this restaurant and finally my first visit to Jade for Dim Sum buffet. Reservation is highly recommended as this place is always full.Best dish ever had, the famous Guo Tie which is a must order. The filling is juicy and tasty which we order 3 sets. Egg tarts. The custard gives a smooth and silky feeling with strong sweet taste. The crust is crispy and definitely you will know it just out of the oven.

All in all, the dishes were great and there is a good variety of food. The price is slightly on the high side but the food quality and taste is worth the price. The ambience grand and is not too noisy unlike typical Dim Sum joints. As there isn't too many tables, Jade staffs are attentive and prompt towards each table.

The dim sum brunch buffet costs $33++ per person and there are two seatings. We took the earlier seating at 11:30am which lasts until 1:15pm. Most of the dim sum are above average. We had the mini abalone siew mai which is very tasty (not because of the small abalone though). Of course, I am all praises for the har gow which boasts of fresh and crunchy prawns wrapped in a thin translucent skin.

Besides dim sum, there are also some chinese dishes in the buffet. We ordered the beef brisket with bean sauce. I must say this is an acquired taste. The beef is no doubt very tender but the beef taste is a little strong. We have mixed opinions on this. Another dish among many others that we ordered was the wasabi mayo prawns. Although it does not look very appetitsing from the photo, taste wise this is very very addictive! The prawns are fried just right, and are crunchy. The wasabi adds depth to the dish and even my dad who do not like wasabi was all raves for this dish. There is also an order for a bowl of soup per pax and desserts included in the buffet as well! Overall, this is really one of the best places I have been to for dim sum. If only they can scrap the timing, it would be better since we can leisurely enjoy our meal for longer.

The har gow skin is also very thin, making this a real delight. We also ordered the beef ball with orange peel. This is just average and not as nice as we have thought it would be. The beef ball is slightly tough and the orange taste does not really go well with it.

Service is quite slow due to the crowd, so it is best to order more at one go.

This restaurant is recommended by one of my hubby family members. We reserved this restaurant one month ago, as the food is good and so we are willing to wait for a month for weekend tim sum buffet. We can order as much as possible, but a boiled soup can only order once. So all of my hubby family members went there and quite enjoying the food there. The main reason we booked this restaurant is to celebrate Happy Father's Day.
