We started queueing at 11am on a Sunday morning and it wasn't until 1130 did they fully open. The queue moves fast. For $6, you get a lot of ingredients. There's no noodles in this bowl. Just flavourful fried fish and sliced fish pieces along with veggies and even tofu! A very hearty bowl of protein! The soup itself is very tasty and suspect MSG to be the culprit being that I was super thirsty after the meal. So note to self, don't drink so much of the soup. The fish itself is nice and fresh.

As far as fish slice awesome soup goes, they serve up really yummy goodness here. Trust me, I've tried many many places fish slice soup and this stall is honestly one of the best in this business!  Jin Huat Fish Head Bee Hoon is worth my 15mins of wait. Creamy white fish broth with fresh fish slices (no fishy nonsense). Mmmmm.... I can personally whack 2 servings but others will judge.... 2 thumbs up!

But I waited patiently for 30 minute while munching on my Ah Tai Chicken Rice and drinking my Iced Cold Barley Drink while my sister lined up for the soup.I asked her, if it's worth it... Sliced Fish Soup ($4) has a really delicate flavour and the fish is fresh with good texture. If you prefer, you can requested to add "milk" for a more white creamy broth. But personally, I just prefer the way it is!

Jin Hua Fish Head Beehoon is worth the wait if you love fish. Just be patient or maybe you buy a drink or shaved ice dessert from next stall that will cool you down while you wait!

After having our tea break at one of the cafes around Duxton area, my friend & I decided to have dinner at Maxwell Food Centre since we were nearby! Maxwell Food Centre is pretty popular as you can find a few famous food stalls there and one of them is Jin Hua Fish Head Bee Hoon. Even so, it will not stop me from coming back for more!

Their is another hawker stall that attracts a lot of crowd during lunch hour. As usual, I gave it a try since it has been featured on press media. They have both the milk and no-milk version. I gave the one with milk a try and I find the soup relatively bland. It wasn't exactly flavorful like how fish soup will be. After queuing for half an hour then was I able to order and receive my food. The reason for the long queue? Well, there is only 1 person cooking and he is cooking only 2 bowls at any one time.

The Sliced Fish Bee Hoon was filled with ingredients such as bee hoon, fish slices, vegetables and fried shallots in a milky broth. The broth was tasty and flavourful. The sesame oil added on top further enhance the flavour of the broth.

As for the fish slices, they were sliced way too thinly. It was hard to get a good satisfactory bite of the fish. The fish texture was rough and tasted bland. Compared to Angel Horse Teochew Fish Soup, this was below par.

Even after we have finish our meal, there was still a long queue at the stall.

I doubt I will be going back any time soon with or without a queue as the fish was disappointing.

Very delicious bowl of milky fish slice bee hoon! I love the texture of the noodles. It is not the usually thick ones that you find in most fish head bee hoon stall, it is slightly thinner, not too soft, cooked al-dente. One thing i want to mention is that the stall helper actually took my tray from me and help me to wipe away the excess water on it while waiting for my order to be done up, I thought that was a really nice touch and it is a good initiative on his part too!

With that many newspaper cuttings and food adverts, one will be intrigued to try this stall out. The soup is very milky and for those who gave this stall a miss because you are afraid of the fishy smell due to them specialising in fish head, don't worry. The ginger within the soup helps to clear the smell away. The fish is soft and tender but other than that, the fried fish was nothing much. The chilli used at this stall are just ok, not too spicy.
