Ambience at Sauce Bar has always been its weak point. While the decor is very good, attractive and whimsical, the relatively open area does little to shelter from the elements. And at night, the interior is barely lit, the dim lighting makes photography difficult.

Service at Sauce Bar is inconsistent. With the experienced staff, I find them polite and helpful, but during peak periods, you'll normally have to wait quite a long time to be served. Attracting their attention is difficult as well. The junior staff aren't much help, apparently, they need to refer to the senior staff. I'm also slightly irked by having staff ask if you can settle the tab / bill immediately after being served.

Sauce Bar focuses mainly on bar snacks, and as such, have almost no main dishes. Portions are either appetizer size, or meant for sharing. Generally, I find food here to be tasty and creative, and the variety of meatballs with choice of sauce are especially good.
The Lyonnaise Potato (SGD $5) is a French side dish that originated from Lyon, Rhône-Alpes, France. Made with thinly sliced, pan-fried potatoes and onions sauteed in butter and parsley, the dish is fragrant and savoury, with a strong caramelised onion flavour.

I tried the Meatballs Classic Italian With Firehouse Arrabbiata Sauce (SGD $14). The hand made beef and pork meatballs were tightly packed, but juicy within, and the fresh, tangy tomato sauce had a slight heat from the chili. Very good!

Loved the unique Lunch Meat Chip Is The New Chip (SGD $8)! The thinly sliced luncheon meat / spam is fried till crisp, but well drained so it isn't oily. A heart attack in a bucket, it's recommended to share this sinful delight.

Would have to say that they really put in effort for this 'pot' of fries even thou its just fries! The amazing thing about it is that its not oily at all, or should i say you cannot even taste the oil not even your fingers. Something in which is a good thing as im someone that gets 'gerlat' easily. To the extend that i would still burp out the taste of the oil after a long time! But not for this Truffle Fries! Everything is just right, right amount of truffle oil, right amount of sea salt! To add to everything, the drinks there are pretty reasonably priced.

we ordered nachos for $8 along with our drinks
the portion was pretty small which was sort of disappointing, but the sauce that went along with it was delicious! i could have licked the saucer clean if it didnt look so unglamorous
haha kidding. it was a light mango mustard sauce which had a lovely slightly-sour taste with the sweetness of the mango. it was really unique! and it complemented the nachos perfectly.

the braised chicken ($15) was done nicely - tender to the bite, and slathered with rosemary sauce. i couldnt really taste the rosemary, i guess it was meant to be subtle haha.

the sauce homemade cheeseburger ($19) was a freshly-made beef patty topped with melted mozzarella cheese, onions, tomatoes and lettuce between soft burger buns and drizzled with BBQ sauce. argh, this was really too long ago >.< i can't remember at all how it tasted.

and lastly, on to my fresh river catch ($20) which was a char-grilled norwegian salmon fillet seasoned with cajun spices, cooked in teriyaki sauce and sat atop a bed of vegetables and mashed potato. i loved it! the smokey flavours of the fish were complemented beautifully by the simple mashed potatoes and the contrast in textures just made each mouthful so interesting.

This place is always packed with people. I suppose it's because their beer is one of the cheapest in town. Was chilling with friends on Saturday night, beer was only $25 nett for 5 bottles. In my opinion, it's very worth it for the location of this restaurant and the kind of ambience. I love the kiddish designed walls inside the restaurant. Their fries with truffle oil and sea salt is also one of the better ones I had tried so far. I feel it's acquired taste, but to me truffle oil smells really

I love the kiddish designed walls inside the restaurant.

Their fries with truffle oil and sea salt is also one of the better ones I had tried so far.
I feel it's acquired taste, but to me truffle oil smells really good. Put it together with french fries.. it's just something that wanna die for.

Love this place a lot of the pretty cute wall designs. I feel like a kiddo in this restaurant doing adult things like drinking Asahi beer which is $6nett all night long. Their finger food like truffle fries and Luncheon meat chips are both Must Try!Their house Fish and Chips was great too. fried to perfection. Fish was fresh.Another interesting dish is The Mentaiko. We also ordered Asahi premium drafts and a Margarita. The drinks were at reasonable prices, given the ambience of esplanade (we decided to have our dinner al fresco, and lap up the cool night breeze over a meal). The best part is that all the prices shown on the menu at NETT!
No need for extra surcharges, which is great!

However, I'd like to point out that the service, unfortunately, is slow and I noticed that the servers do not carry notepads with them (maybe that is why they only serve 1 table at a time for fear of forgetting orders?), and they are rarely attentive to their surroundings, making it difficult for patrons to signal for attention.

All in all, Sauce at Esplanade is worth trying, especially with its extensive drinks list (you'd want to try the Asahi bucket of 5 if you are in a group!) and great ambience. Food/service isn't that great, but it makes up for it with the ambience, nett prices and drinks variety.

We ordered an appetiser, the Ebi Panko (Prawn with Special Mustard Sauce) $12.00, two mains, the Fish and Chips $18.00 and the Fresh River Catch $20.00, which is actually pan-fried salmon.

The salmon was OK, slightly underdone, but I really like the Fish and Chips. The Fish came in squares (!), totally not what we were expecting and the fish flakes were a nice touch.

By the way, don't expect air-con here. Like most of the other establishments at the Esplanade area, a lot of them have al-fresco dining concepts and it is the same here. They do have those industrial-type fan mists though.

Sitting on a bed of astro turf with a view of the fullerton bay area can be quite a nice experience provided the weather is forgiving. For those who are worried about the tropical heat, there are powerful fans in place to minimize any discomfort. But honestly it still felt a little warm after a while.

To be honest, I don't think the food tasted like it had been BBQed the traditional charcoal way as the smokiness seemed to be lacking. Quality wise, I would say it hovered around the average mark with none of the food really standing out. I like the concept but it would probably take better food for the concept to fly in my humble opinion.

my father treated the family to something nice the other day. We went to sauce. As I did not have much of an apetite, I ordered their Smoked salmon sandwich. It was really good. the bread was toasted till very crispy. The salmon was very fresh, it was tender and juicy. I love the way they smoked it, enhances the freshness of the salmon, it simply melts in your mouth. I was surprise to find something this good at sauce!
