Before I tried this dish at Holland Village XO Fish Bee Hoon Restaurant, I didn't actually know what is 'aspic'. The pork is first cooked, then chilled with the jelly made from meat stock. It is cold when served, and remember to eat it fast before the stock starts to melt. This "Chilled Pork" is very cooling and suitable for appetizer. It is slightly sour in taste due to the vinegar added.
