This probably is the best ramen in Singapore as agreed by most. When i was sharing some of the foods eaten during my recent Hong Kong trip in a forum. When i was sharing some of the foods eaten during my recent Hong Kong trip in a forum. Someone after reading my review for a famous ramen shop in Central, Hong Kong challenged me to try Keisuke Tonkotsu King and to compare both.
I have heard and read certain reviews about this ramen shop located at Orchid Hotel. Some even claimed that this could be the best Ramen in Singapore. When i was in that area to collect my birthday cake, i decided i should go for it. I was there at about 11.45 am, a relatively long queue of about 8 people already formed. While waiting, a friendly waiter came out to distribute the order chips.
On the order chip itself, we were expected to select the type of ramen and the type of ingredients to be added.The taste of the soup is in control by selecting whether we like it to be light, normal or strong. It stated in the order chip that normal is recommended as it is supposed to be the authentic japanese taste. We are in control of the amount of chicken oil to be added by selecting one of the 3 options mentioned earlier and we are able to choose the texture of the noodle to be in between the options of hard, normal or soft. The order chips collected while we were still waiting in the queue.
We decided to go with Red Spicy Tonkotsu Ramen Special with Japanese Seaweed and flavored egg for $15.80 and Black Spicy Tonkotsu Ramen with Japanese Seaweed for $13.80.
We waited for another 10 minutes before ushered into the shop. It is a very small shop with 3 x 2 seaters, 2 x 4 seaters and a bartop seating area for 4. I would suggest not to come in a big group to avoid long waiting time. Once seated, sets of sesame in a little wooden bowl with motar awaited on the table. We were supposed to grind and crushed the sesame seeds to release the nutty fragrance then sprinkled onto the ramen later. Our bowls of ramen were served soon after.
There were free flow of boiled eggs and other condiments like bonito flakes, japanese chilli flakes, spicy bean sprouts and even mayonnaise on the table to flavor the taste of ramen according to our preferences.
The boiled egg was a little overcooked to my liking but the spicy beansprouts was a healthy addition to enhance the flavor. The flavored egg was really good though, there was a light shoyu taste in the egg white and with nice flowing orange colored soft and creamy egg yolk beneath. I would very much willing to pay the extra for the flavored egg and to skip the free boiled egg.
My bowl of spicy ramen was pretty mild in the level of spiciness, so mild that it was not noticeable if it was not given away by the bright red color of the soup broth. I would very much prefer it to be spicier. I added the chilli flakes provided to increase the spiciness a little and hoping to give it an extra kick. I overheard the conversation of the group seated right beside us, they shared the same comment about the spicy ramen, thinking it would be nicer if it was spicier. The slices of pork chashu were in pretty big pieces and pretty well done in taste. It went nicely with the black fungus and the big piece of seaweed added. And, not forgetting the springy ramen with an awesome texture in the well-brewed pork bone broth.
The black ramen was of the black pepper taste. The black pepper taste was a little overwhelmed as we selected strong taste for the soup. It would be wiser to go with normal for the taste of the soup as suggested on their order chit.
And, please remember to bring enough cash as only cash is accepted for payment.
If i am going to compare this to the one that i have eaten during my recent Hong Kong trip then the one that i had in Hong Kong was definitely better.
But i did not eat enough ramen in Singapore to tell whether this is indeed the best ramen in Singapore but the ramen served in Keisuke Tonkotsu King is definitely above average at an affordable prices, it is even as economical as those served by certain ramen chains in Singapore.
I will definitely come back when i am hit by the craving for ramen again.
