The chef will then eventually make use of these mashed yam to found into many small slices of yam rolls before bring it to deep fry. I believe there are also lots of smashed shallots mix in the yam paste as the out come of this dish is really crispy, smooth in texture and also very fragrant throughout every bites of it. It is one of their best selling dish here and usually sold out very fast. Great to eat it on its own or to eat with normal plain rice is equally nice as well.
