Full Alkaff Mansion Ristorante review here: http://ivanteh-runningman.blogspot.sg/2013/08/alkaff-mansion-ristorante-tasting.html

Set amidst the serene and picturesque Telok Blangah Hill Park, the restored colonial facade of the Alkaff family mansion now houses the Alkaff Mansion Ristorante. With its panoramic views of the park, impeccable service and authentic Italian food, Alkaff Mansion Ristorante is an excellent choice for romantic dates, special celebrations, and business dining, provided you're willing to spend.

Ambience at Alkaff Mansion Ristorante exudes an old world colonial charm. With its classic European-style architecture, beautiful fountains, romantic gazebo, and quirky giant rocking chairs (What?), Alkaff Mansion Ristorante is not surprisingly used for wedding solemnisations. The interior has an elegant, rustic charm, with its high ceiling, wooden panelling and solid furniture. Alkaff Mansion Ristorante has a rather spacious layout, and the second floor can been booked for functions.

I find the service at Alkaff Mansion Ristorante to be hospitable and impeccable. The excellent service at Alkaff Mansion Ristorante stems from staff's attention to little details, such as plating design, choice of words when speaking, body language, and more. Staff at Alkaff Mansion Ristorante have good product knowledge, able to explain the various intricacies of each dish, such as preparation and type of ingredients used. They are also able to cater to specific dietary requirements to a certain extent.

Food at Alkaff Mansion Ristorante is authentic Italian, focusing on cuisine from the Tucany region of Italy. Tuscan cuisine is characterised by freshness of ingredients, simplicity in preparation, rustic and hearty dishes and wide variety of game protein. Executive chef Marco Guccio heads up the kitchen, and his upbringing in the agricultural industry means he insists on hand-making dishes using quality imported ingredients. Such high quality of ambience, food and service means a high price as well, and a typical 3 course meal at Alkaff Mansion Ristorante will cost about SGD $50 - $70 per person. Average price per dish is about SGD $30. Personally, I feel that prices at Alkaff Mansion Ristorante are reasonable.

Tasty Hot Stone Claypot Dishes Smile Aug 03, 2013

Categories : Chinese | Restaurant | Rice | Kids-Friendly

Located in the relatively quiet neighbourhood of Beo Crescent / Havelock Road, Signature Stone Restaurant offers a unique concept; claypot dishes prepared with hot stone bowls. This novel method of preparation ensures a consistent heat throughout the meal, and also prevents rice from blackening even as it still becomes crisp. Along with the concept of hot stone bowls, Signature Stone Restaurant also offers a range of traditional Chinese dishes, and several unique Western inspired dishes.

Ambience at Signature Stone Restaurant is just average. With a small floor space and few seats, reservations are recommended if you wish to visit. While clean, bright and air-conditioned, the small area of Signature Stone Restaurant also increases the ambient noise levels. Decor is minimal.

Service is outstanding at Signature Stone Restaurant. You should call 10 minutes before you arrive to place your order, so as to avoid the typical waiting time of 15 - 20 minutes for food preparation. Staff will help you prepare the dish when they serve. I also like that they check if your meal is going well, something that only happens in more up-market restaurants.

Food at Signature Stone Restaurant is excellent. Overall, dishes are tasty, flavourful and quite filling. I like the different options of Asian and Western dishes on the menu, as well as the variety of side dishes, most of which are served in the signature hot stone bowls. The food is thoroughly cooked but not dry, well seasoned, and the rice gets crisp without being burnt black. Prices are reasonable and affordable, at about SGD $7 - $15 per dish, good value for money.

Located within The Ritz-Carlton Singapore, the Summer Pavilion restaurant is the hotel's in-house, Chinese fine dining offering. Having completed a major makeover in November 2015, the Summer Pavilion restaurant lives up to the reowned standard of The Ritz-Carlton hotel brand, with impeccable service, a refined ambience, and well-executed, Chinese Cantonese fine dining food.
Summer Pavilion Main Dining Hall

Summer Pavilion Main Dining Hall

Ambience at Summer Pavilion restaurant is thoughtful, refined, and sophisticated. No expense was spared, with top interior and fashion designers contributing elements, from the carefully selected plush furnishings, the warm timber wooden panels, the sparkling white lacquer, and the cruated art pieces, all reflecting a zen purity in design. The main dining hall, which seats up to 119 people, are reminiscent of a tranquil, modern Chinese garden, with floral motifs by Robert Louey Design and dining spaces laid out for privacy. Staff are dressed sharply in tuxedos designed by Mineo San of Art Marginal, while soothing Chinese flute and piano music by Morton Wilson of Schtung Music play in the background. The 6 private dining rooms of varying sizes offer an exclusive experience, while the Garden Suite is perfect for hosting private events.

Service at Summer Pavilion restaurant befits The Ritz-Carlton brand, being professional, efficient, and attentive. Staff are unobstrusive and polite, quietly going about their duties in the background, though they are also quick to step forward and assist when requested. Pleasant and memorable, you almost don't notice staff clearing away empty / dirty dishes or changing plates, and they also helpfully portion out food in equal amounts. Each dish is introduced, displaying their familiarity with the menu and ingredients. Staff are also good hosts, warmly greeting guests, and rendering assistance to elderly customers or parents with young children. While they can converse in English, I find most staff here more comfortable speaking in Chinese Mandarin or Cantonese.

Food at Summer Pavilion restaurant consists mainly of fine Chinese Cantonese cuisine. Executive Chef Cheung Siu Kong turns out exquisite, beautifully plated dishes, well executed with fresh ingredients, and simple, comforting flavours. Despite the modern setting, I find the food here to be straight forward and clean, with 1 or 2 ingredients being highlighted in each dish. Tasty and familiar, almost like a warm hug. Portions are designed to be mostly communal in nature, and dining in groups of 4 or more is recommended. Prices naturally reflect the fine dining status of Summer Pavilion restaurant, budget about SGD $100 ++ per person for a full meal here. While not wallet-friendly, it's good value for money for the high quality. Not for common everyday dining, but suitable for special occasions!

The Pan-Fried King Scallop (SGD $16 Set) is part of a 2-part appetizer set. A new item on the menu, the scallop is sweet, meaty, and moist, with a hint of smoky aroma. Fresh and clean, I find dipping this in the premium soy sauce makes it so much tastier! Served over a bed of greens, which are more for decoration than for eating.

The Double-Boiled Fish Bone Soup, Fish Maw, Wolfberries (SGD $38 / Portion) is chef's signature dish, and the best item, hands-down, we ate here. The thick, almost creamy, sweet savoury broth / soup is made by double boiling Chilean seabass fish bones, till all the flavour and collagen has been extracted. Garnished with wolfberries, and a large, generous slab of Chilean seabass fish maw, which is tender, and has completely absorbed the flavour of the soup / broth. Excellent flavour, completely comforting and satisfiying dish. Highly recommended!

The Poached Lobster Rice (SGD $20 / Portion) was surprising and creative, yet with familiar, comforting flavours, a testament to the chef's skill. Presented in a bowl, with soft crustacean flavoured rice, garnished with crisp fried rice, fresh sweet lobster tail meat, and crunchy spring onions, a thin yet flavourful hearty crustacean broth / soup is then poured over. The result is a bowl resembling modern porridge in texture, savoury and soft, but with delightful crisp and sweet contrasts. I would come back just to order a bowl of this! Highly recommended!

A long serving stalwart of the Fairmont Hotel Singapore, having opened together over 30 years ago, Szechuan Court is a reowned Chinese fine dining restaurant known for its excellent Szechuan and Cantonese cuisine, impeccable and attentive service, and stunning Imperial Chinese decor. The high level of quality and ability to consistently deliver continues to draw many diners to Szechuan Court, and despite its high prices, makes one feel it's still value for money.
Szechuan Pickled Mustard Tuber

Szechuan Pickled Mustard Tuber

Ambience at Szechuan Court exudes a luxurious and sophisticated elegance, having been recently renovated in 2011. The Chinese Imperial style royal decor within the spacious setting is enhanced with gleaming black onyx lacquered surfaces, contrasted by rich fabric colours in red, scarlet, white, and gold. Walk past the Imperial styled entrance, and choose to dine in 1 of 2 areas, the spacious and bustling open restaurant, or the quiet private booths which offer a view of the city skyline. Impressive, all around excellent!

Service at Szechuan Court is courteous, professional, efficient, and hard-working. Staff politely greet guests, and quickly usher you to your selected seats. If questioned about the menu, they are able to describe dishes in basic detail. I realise however, they are more fluent in Mandarin than English. Staff proactively top up tea / water without being asked. Observant and attentive, they arrive quickly when beckoned, offering near personalised service. I also appreciate that staff change your cutlery and plates after every dish, good effort!

Food at Szechuan Court comprises traditional, familiar Chinese Szechuan and Cantonese flavours, presented in modern fine dining style, arranged neatly on clean, white dishes. Staff will present you the dishes, then assist to portion it out. Generally, the ingredients used are fresh, prepared with respect, and well executed, full flavoured with excellent taste. Completely delicious!

We tried mainly the Szechuan dishes, and I must say that looks are deceptive, because while they look non-spicy, there was always the hidden presence of chili, spice, peppercorn, or chili oil. Yet the skill of the kitchen is such that the heat is palatable, not overwhelming. Portions are designed for communal dining. Perhaps the only drawback of Szechuan Court is the high prices, as expected of a fine dining establishment. Be prepared to splurge between SGD $80 - $150 per person for a meal here. I personally feel this is good value for money, as you can expect a consistently high standard.

The Braised Bird's Nest, Cabbage, Chicken Broth (SGD $42) is a large, filling, luxurious, individual bowl of yummy soup / broth! The chicken soup / broth is light with a slight savoury taste, filled with fresh chinese cabbage / bok choy, wolfberries, and a generous portion of bird's nest! Quality is evident, the strips of bird's nest are off-white / pearl white and translucent in colour, doesn't stain the soup / broth, is sweet with no fishy taste, and is smooth and slippery in texture, like thick egg-white. Chef says this is his favourite dish!

The Stir-Fried Duck Breast, Black Fungus, Pickled Wild Chili (SGD $32 / $48) has duck meat which is cooked till tender yet not dry, similar to the texture of venison. An earthy, aromatic, savoury dish with bell peppers / capsicum, black fungus, and soft garlic, the duck has also picked up some spicy heat, and there is a slow burn that builds while eating this. Surprisingly, the pickled wild chili isn't spicy, instead, it's face-scrunchingly, intense sour.

Absolutely loved the Braised Pork Belly Ribs, Crispy Rice, Sweet Vinegar Sauce (SGD $30 / $45)! The pork meat has a fork tender, moist texture, with a sweet, clean taste from the unique vinegar. The exterior is coated with Sezchuan peppercorn spice, which you don't feel at first, until it starts to numb your tongue, though there isn't any spicy chili burn. The small selection of diced tropical fruit lend a tinge of juicy sweetness, while the small bits of crispy white rice is genius as a garnish, eye-catching while lending a crunch to texture. Exotic, and really good!

Full Kaldi's Berry review here: http://ivanteh-runningman.blogspot.sg/2014/07/kaldis-berry-tasting-session.html

Founded in October 2012, Kaldi's Berry has grown to be more than yet another artisanal coffee house for hipsters, to a true haven for coffee connoisseurs. Named after the legendary goat herder Kaldi who was said to have discovered coffee, Kaldi's Berry is a comfortable, relaxing place, perfect for romantic dates, business talks, and even group chill-outs! For serious coffee drinkers in pursuit of the best brew in Singapore, or those seeking to learn more about coffee appreciation, be sure to visit Kaldi's Berry!
Kaldi's Berry Exterior

Kaldi's Berry Exterior

Ambience at Kaldi's Berry is casual, modern, and relaxing, with decor paying homage to all things caffeine. While actual floor space is small, movable furniture means seating can be customised for business meetings, leisurely chilling, or group hang-outs. The high ceiling and bright lighting lend a sense of space, while solar film over the glass panel reduces glare from the street. I also love the quirky coffee decor at Kaldi's Berry, like the Hario V60 Coffee Dripper converted into hanging lamps.
Kaldi's Berry Interior

Kaldi's Berry Interior

Service at Kaldi's Berry is very good. Staff are friendly, welcoming, and efficient in fulfilling orders and clearing tables. I find staff at Kaldi's Berry to be especially knowledgable on coffee, including methods of preparation, the taste of each type of coffee bean available here, and even some coffee history! Not surprising, as the owner is a Level 1 SCAA (Specialty Coffee Association of America) certified barista, and provides regular training for Kaldi's Berry staff.
Coffee Beans - Light Roast & Dark Roast

Coffee Beans - Light Roast & Dark Roast

Kaldi's Berry even holds regular coffee appreciation and brewing classes, every Wednesday 7:30pm - 9:30pm, and every Saturday 3:30pm - 5:30pm. The sharing and exchange of coffee knowledge covers topics such as, a basic introduction to the coffee making process, the 6 essential elements of brewing good coffee, the 3 main stages of the coffee brewing process, and more. Each 2 hour session typically costs SGD $$168 per person.
Kaldi's Berry is the first in Singapore to use the Cold Drip Method with a twin valve drip system from Korea, a process which involves steeping coffee grounds in ice cold water for an extended period of time.
The advantages of the Cold Drip Method include a refreshing, naturally sweeter coffee with lower acidity, which can be safely stored in the fridge for as long as 3 weeks. In fact, coffee produced using the Cold Drip Method is like fine wine, the taste profile actually changes and gets better when aged!
Coffeega Korean Cold Drip Coffee Maker Ridge 3.2

Coffeega Korean Cold Drip Coffee Maker Ridge 3.2

The fresh version, aged 1 day, already has a very smooth, easily drinkable texture, with a slight sweetness in the front, a lingering bitterness at the back, and an overall refreshing feel. The version aged for 5 days however, while having the same texture and refreshing feel, has much less bitterness, and more sweetness.
Food options at Kaldi's Berry are their weakest point, as the range is somewhat limited to mainly desserts and sandwiches. I've always had this nagging worry about true specialty coffee joints, that they focus too much on coffee and neglect the food. At Kaldi's Berry, I'm happy to say that the taste, quality, and quantity of food is above average, though there is room for improvement. Portions sizes are large for 1 person, and prices are reasonable for a cafe. Budget about SGD $8 or so per person for food alone.
The All Day Breakfast Set With Bacon & Ham (SGD $11.90) is probably the only 'main course' on the menu here. The scrambled eggs are soft, fluffy, and tasty with a dash of black pepper. The toast is slightly underdone, not yet crisp, but the salad vegetables are fresh and crunchy. The sauteed mushrooms are nicely cooked, earthy and savoury. The ham and bacon were well grilled, and paired well with the bread.

The Waffle With Strawberries, Bananas, Vanilla Ice Cream (SGD $6.90) is the largest dessert available on the menu. Served with fresh strawberries, bananas, and chocolate sauce, the fruits lend a fresh sweetness to the dish. The large scoop of vanilla ice cream I noticed was quite hardy, taking a long time to melt. The difference though, lies in the waffle batter, which is soft and bread like in texture, very different from other waffles elsewhere. Staff tell me that they are experimenting with infusing coffee flavour into the waffle batter!

Anyone with a passing interest should visit Kaldi's Berry, if not for the knowledge, then at least for their outstanding coffee beverages and friendly service. Kaldi's Berry is perfect for light bites, business discussions in a casual setting, leisurely afternoon dates, and chilling with a book.
