Dear Chef Jean-Philippe Patruno & team at Una 1 Rochester Restaurant,

Thank you for making our company event a memorable success. We were very pleased with the outstanding food, and the impeccable, professional service demonstrated by your staff.

Ambience at Una 1 Rochester Restaurant is lovely. The abundance of greenery and well thought out spaces create a feeling of calm relaxation during the day, and a more intimate setting at night.

The spacious outdoor alfresco dining area is beautiful with its high chairs and fountain waterfalls, and the indoor dining area exudes a casual elegance and sophistication with well chosen, comfortable furniture and art pieces. We also felt the choice of Bossa Nova piped music at Una 1 Rochester Restaurant was appropriate for its setting.

Thank you for letting us have the exclusive use of the Private Dining Area on the 2nd floor, as well as the accompanying Private Bar, Private Banquet / Tapas Area, Bridal Changing Room, and Projector & Screen at no extra charge. The equipment (Projector, Screen, Audio/Video, Sound System) were in great working order, and we also liked that the lights could be brightened or dimmed upon request. The view of greenery from the upper level is serene, and I noticed you actually have Rambutan trees growing in your premises!

I must commend your team of service staff at Una 1 Rochester Restaurant for their outstanding, professional and efficient service rendered during our company event. In particular, you and Ivee for your openess in accomodating requests and working through last minute changes. And Peter for handling on-the-spot guests requests to change meals, as well as your kitchen for preparing food efficiently and quickly, such that none of our guests waited more than 10 minutes for their meals.

I was particularly impressed that when we requested a change of tables for our certificate display, your staff actually sourced a table, cut up a roll of cloth for the table top, and found skirting to dress the table, all within 15 minutes. Aside from a minor hiccup in the beginning of meal service where the canapes and amuse bouche took quite long to be served, the rest of the night went exceedingly well.

What initially led us to consider Una 1 Rochester Restaurant was the fact that you could provide Halal certified meals. Although Una 1 Rochester Restaurant serves Western style fine dining, in particular cuisine from the South of Latitude 30° - Spain, Italy, and France, your partnership with a Halal certified kitchen to prepare Halal / Muslim meals that is presented in a similar manner to your actual dishes, tastes almost the same, and is even served with Halal certified cutlery, is fantastic.

In fact, feedback from our guests is that Una 1 Rochester Restaurant is probably the first high-end, premium fine dining restaurant that is able to served Halal certified Western meals, that they've encountered! Our Muslim guests said the quality and taste of the Halal meals is extremely good, and are pleased that your staff took the trouble to provide Halal cutlery, at no additional charge. They were surprised that you also provide for / organise Muslim Weddings!

We had originally agreed to a 5-course set menu (2 x Canapes, Amuse Bouche, Appetizer, Mains, 2 x Desserts - Per Person), at a fixed price of SGD $130 per person (without GST & Service Charge), although we ordered additional dishes at the last minute (for a total of SGD $180 per person, with House Wine / Beer + GST + Service Charge). Thanks for giving us the free flow of water, soft drinks, and fruit juices throughout the night!

The Pimentos De Padron (SGD $16 Ala-Carte Tapas Portion, SGD $10 Set Menu Canape Portion) featured perfectly grilled Spanish Padron peppers. Most Padron peppers have a mild taste, only 5% are spicy due to the amount of water and sunlight they receive when grown, but fortunately, all the ones we had that evening were mild. I like how your staff describe it as "a lucky draw", as there is no way to tell the difference just by looking at them!

The Octopus, Ratte Potatoes, Smoked Paprika (SGD $29 Ala-Carte Tapas Portion) were well received. The octopus was plump and fresh, with a meaty bite and clean taste. The potatoes had a slight sweetness and a slight earthy taste, which paired well with the octopus.

Your signature appetizer of Scallops A La Plancha, Veal Cheeks, Iberico Ham Crisp (SGD $28) was very highly recommended, and I now understand why. Everyone was raving about how perfectly done the scallops were, plump, juicy, and just firm enough in texture. The veal was fork tender, coming apart easily when bit, while the black Iberian ham crisp lent a salty, savoury crunch to this surf and turf dish. The bed of mashed potato was smooth and creamy, absorbing the flavours of the veal and scallops.

The mains of Wagyu Sirloin, Pequilo Peppers, Roquefort (SGD $50) has wagyu beef that was done to our liking, I had mine medium rare. The beef is very tender and flavourful, and the roquefort cheese added a burst of sharp tangy taste to each mouthful. The spinach and Spanish pequilo peppers added a vibrant colour on the plate, and a slight sweetness to the overall dish.

The dessert of Panna Cotta, Popcorn (SGD $14) went down well with our guests, especially the crisp, crunchy popcorn-like bits on the top. The panna cotta itself was smooth, creamy, and sweet, and the passionfruit puree within gave it a tropical, fruity sweet taste.

The off-menu / special request dessert item of Chocolate Ganache In Chocolate Soil didn't fare as well, as many of our guests thought it overly sweet. The texture was nice though, being thick, rich, and creamy, but the overpowering sweetness made it hard to finish.

Overall, we had a fantastic evening at Una 1 Rochester Restaurant, and the bosses are likely to strongly consider this as a venue for future events our company may hold. I personally will be visiting again to try the brunch menu! Thanks once again for all the assistance, it's much appreciated!

Best Regards,
Ivan Teh RunningMan.

Located on the 32nd floor of the Westin Hotel, Seasonal Tastes is the signature in-house hotel restaurant, with a wide buffet spread ranging from Asian to International dishes. Offering an Interative Kitchen where each chef is dedicated to a particular speciality, Seasonal Tastes is a top quality hotel buffet, with panoramic views of the surrounding Marina South and Marina Bay area.

Ambiene at Seasonal Tastes is fantastic. Floor to ceiling length windows offer perfect view of the bay area, while decor is modern contemporary chic. The spacious layout even has semi-private alcoves, while furniture is not only eye-catching but comfortable as well. The buffet spread is well laid out in sections (Fresh Seafood, Indian, Italian, Japanese, Desserts), though the actual flow of the spread isn't linear. Overall ambient lighting is also rather dim.

Service at Seasonal Tastes is outstanding. Staff are friendly and polite, offering greetings on entry. Efficient as well, clearing empty plates quickly, and topping up water glasses without being asked. I must also commend the Seasonal Tastes staff, on 1 anonymous visit I had left my camera behind, and only discovered the loss after I had departed the hotel premesis. Panicked, I returned, only to find the Seasonal Tastes staff holding onto it, and searching the hotel for me. Excellent, memorable service!

Food at Seasonal Tastes is generally of high quality, with each chef having dedicated specialities. Helmed by German Executive Chef Sven Cepon, the team comprises both local and regional chefs, each specialising in their own cuisine. Dishes are freshly prepared daily according to traditional recipes, and the menu is rotated regularly to keep things fresh even for repeat diners. Prices at Seasonal Tastes are on the upper end, budget about SGD $70 per person for the dinner buffet.

The unique Lobster Russian Salad With Vodka Mayonnaise features loads of fresh potatoes, peas, cherry tomatoes and dill, along with fresh, meaty, succulent lobster meat. The vodka mayonnaise is light, not too heavy or overpowering, and complements the freshness of this cold salad.

Loved the Fusilli Pasta Salad, Sundried Tomato Dressing With Shaved Prosciutto Ham! The ham lent a salty, savoury taste to the clean, fresh taste of the pasta, while the sundried tomato added a burst of juicy flavour in the mouth.

The Macaroni And Cheese Salad With Smoked Chicken features hand made macaroni, with a nice bouncy texture. The smoked chicken is done perfectly, lending a savoury, smoky taste and lifting the whole dish. But I couldn't detect the presence of the cheese at all.

The Vegetable Lasagna is decent, featuring a heaping amount of fresh vegetables within, including zucchini, eggplant / aubergine, and the use of fresh tomato paste. The noodles were unevenly cooked though, some parts were soft and pliant, others were hard and crisp.

Every night, the chef prepares a special hand out served to each table, and we got the Lobster Thermidor. Chunks of fresh lobster cooked with egg yolks, cognac, powdered mustard and gruyere cheese, the Lobster Thermidor is served in its own shell, and is a decadent dish. Eating it feels like an indulgent extravagance!

Ordered the Mushroom Tortellini Aglio Olio With Bacon & Crispy Garlic from the live pasta station, it was outstanding! The best part as the use of the crispy fried garlic bits in the aglio olio, which releases a burst of flavour! The dried red chili added some heat to the olive oil, while the addition of bacon on request lent a smoky, salty flavour to the pasta. The Mushroom Tortellini itself is hand made, and contains a small chunk of fresh mushroom within, I felt the skin was perfectly done, not too thick or thin in texture, and holding together well.

The hand made gelato ice cream at Seasonal Tastes is a house secret, and all their flavours are extremely good! The Hand Made Coconut Gelato is smooth and creamy, and you can actually taste the coconut flavour!

I thought the Hand Made Avocado Gelato was probably the best among the flavours here, simply because it's not a common flavour. The taste of the avocado is prominent in the gelato ice cream, and the texture is creamy, smooth, and somewhat light.

Overall, Seasonal Tastes offers great tasting, quality food for a high end buffet, with prices to match. The rotating menu keeps things fresh and interesting, making repeat dining a big attraction. And with fantastic views of the area and outstanding service, it's no surprise I've already visited Seasonal Tastes several times!

Established in 1994, Kabayan Filipino Restaurant is among the stalwarts of Filipino cuisine in Singapore, having held its own since the beginning. Operating as part of the Kabayan group, which includes Kabayan Travel and Kabayan Remittance, Kabayan Filipino Restaurant is among the best places for Filipino food in Singapore, and the go to place for those yearning for authentic, tasty recipes from home in the Philippines.
Kabayan Filipino Restaurant Signage

Kabayan Filipino Restaurant Signage

Ambience at Kabayan Filipino Restaurant is similar to a casual cafeteria / food court, but cleaner and more well ventilated. The interior is spacious, but tables are packed quite closely together to maximise seating. I like that furniture is comfortable and sturdy, and the smell of food doesn't linger in the air. The main drawback for me is the dim, low lighting, which makes the place look darker than it should.
Kabayan Filipino Restaurant Seating

Kabayan Filipino Restaurant Seating

Service at Kabayan Filipino Restaurant is self-service, cafeteria style. Diners queue up, order from a menu or the large display case, make payment, collect the order, then collect utensils. Still, the staff at Kabayan Filipino Restaurant are very friendly, and most can understand simple English, so ordering isn't a problem. I like that staff are efficient and quick at clearing tables. Kabayan Filipino Restaurant also boasts a small in-house bakery which produces authentic Filipino desserts from various regions in the Philippines.

Prices at Kabayan Filipino Restaurant are very affordable, considering its location in Orchard Road, Lucky Plaza mall. A typical budget meal of rice with 2 dishes costs SGD $4.50 + per person, while a short-order meal from the menu costs about SGD $6.50 + per person. Desserts average about SGD $4 each. Portions sizes for meals are sufficient for 1 person, though desserts portions are large enough to be shared by 2 people.

Food at Kabayan Filipino Restaurant is prepared according to authentic Filipino recipes, by chefs who have worked in various restaurants in the Philippines. The result is rustic, home cooked style Filipino comfort food that is tasty and delicious, with each mouthful packing delightful flavour. The variety of food options at Kabayan Filipino Restaurant is extensive, drawing inspiration from various street food, and regional food around the Philippines.

The thing about cuisine from the Philippines, is the unashamedly intense taste (sweet, sour, salty) and texture (oily, crispy, tender) of each dish. Known for their bold tasting dishes, Filipino food is neither subtle or balanced, thus, may not appeal to everyone. The best way to consume Filipino food is by pairing dishes, such as sweet and salty, or by pairing with plain white rice.

Tapsilog (SGD $6.50) is the Philippines portmanteau of Tapa, Sinangag, and Itlog (Fried Sunny Side Up Egg), served with a side of Atchara (Pickled Payapa Salad), and fresh cucumbers and tomato slices. A one-dish meal usually consumed for breakfast in the Philippines, here it's served only for lunch and dinner, with the portion size being rather large. The salad, with its sour tangy taste, makes a nice foil to cut through the savoury taste of the meat.

Tapa refers to Filipino dried meat cured with salt. Beef Tapa (SGD $3) is the most common version of Tapa, typically served fried or grilled. The Beef Tapa here is tasty and flavourful, I daresay among the most intense meaty taste I've ever had, even while I was in Manila! Not overly dry, salty, or stringy, the beef tears apart easily. Very good!

The deceptively plain-looking but fragrant Sinangag (SGD $3), or Garlic Fried Rice, has a strong but pleasant aroma that hits you when served. The rice grains are nicely fried with an even coating of the garlic flavour, albeit slightly oily. Rather sinful, but so addictive you can't stop eating it!
Sinangag Garlic Fried Rice

Sinangag Garlic Fried Rice

Considered the national dessert of the Philippines, Halo-Halo (SGD $3.90), or 'Mix-Mix', consists of a mixture of shaved ice and coloured sugar syrup, topped with a variety of ingredients. Here, the garnishes include kidney beans, plantains, sweet potato, attap seeds, gulaman seaweed jelly, purple yam / taro ice cream, and coconut milk. The name of this iconic and much loved dessert is pronounced 'Hello-Hello', and it's similar in style to the Chendol dessert of Singapore and Malaysia.
Halo-Halo

Halo-Halo

The Budget Plate, also called the Turo Turo Plate (SGD $4.50), consists of plain white rice, with 2 dishes of your choice. 'Turo Turo', which means 'Point Point', is similar in concept to an economical rice stall, where you point to indicate which dish you want. Choose from about 20 or so traditional, classic Filipino dishes, with premium items costing slightly more. For an affordably low price of SGD $4.50 per plate, the portion size is sufficient for one, and it's the default option for many diners here!
Turo Turo Budget Plate

Adobo Pork (SGD $2) is made by slow braising / stewing pork belly in a sauce of pepper, garlic, vinegar, soy sauce and bay leaves. The result is tender, soft, and fragrant meat, that is both salty and savoury. This national dish of the Philippines is best eaten with plain white rice. The version here is very oily though, I typically allow the oil to drip off first before eating it.
Adobo Pork

Adobo Pork

A popular and common Filipino Chinese fusion dish, Chop Suey Guisado (SGD $2) consists of a medley of vegetables, stir fried together with either meat or seafood. The version here includes spinach, button mushroom, onions, bell peppers / capsicum, cauliflower, broccoli, and cabbage, stir fried in oyster sauce, with prawns, fish cake, and a small amount of pork liver. The vegetables are fresh, tasty, and clean, plus the overall dish isn't too oily. But it's slightly let down by the use of frozen prawns. The use of pork liver though, surprised me, as it lent an earthy taste to the vegetables.
Chop Suey Guisado

Chop Suey Guisado

Sinigang Pork (SGD $2) is a popular Filipino stew that derives its signature sour flavour from tamarind. Whilst commonly eaten by locals of the Philippines, it's an acquired taste for Singaporeans, being more sour than anything in Singaporean cuisine. I quite like it though! The pork ribs within the soup are soft and tender, with the meat coming off the bone easily. The vegetables, which include tomato, onions, eggplant, string beans, and white daikon radish, are fresh, and super soft. Best eaten with plain white rice!
Sinigang Pork

Sinigang Pork

The people of the Philippines love their pork, with a large majority of their food revolving around it! A hot item with the Filipinos here is the Lechon Kawali Roast Pork Belly (SGD $4), it features a crisp crackling / skin, that shatters when bit. However, I find the meat to be very dry. In a Singaporean context, this dish is average at best, you can easily get better Chinese roast pork from a Cantonese roast meat stall. I've tasted better renditions in Manila too. Probably the weakest dish available here, skip this!

Full Kaldi's Berry review here: http://ivanteh-runningman.blogspot.sg/2014/07/kaldis-berry-tasting-session.html

Founded in October 2012, Kaldi's Berry has grown to be more than yet another artisanal coffee house for hipsters, to a true haven for coffee connoisseurs. Named after the legendary goat herder Kaldi who was said to have discovered coffee, Kaldi's Berry is a comfortable, relaxing place, perfect for romantic dates, business talks, and even group chill-outs! For serious coffee drinkers in pursuit of the best brew in Singapore, or those seeking to learn more about coffee appreciation, be sure to visit Kaldi's Berry!
Kaldi's Berry Exterior

Kaldi's Berry Exterior

Ambience at Kaldi's Berry is casual, modern, and relaxing, with decor paying homage to all things caffeine. While actual floor space is small, movable furniture means seating can be customised for business meetings, leisurely chilling, or group hang-outs. The high ceiling and bright lighting lend a sense of space, while solar film over the glass panel reduces glare from the street. I also love the quirky coffee decor at Kaldi's Berry, like the Hario V60 Coffee Dripper converted into hanging lamps.
Kaldi's Berry Interior

Kaldi's Berry Interior

Service at Kaldi's Berry is very good. Staff are friendly, welcoming, and efficient in fulfilling orders and clearing tables. I find staff at Kaldi's Berry to be especially knowledgable on coffee, including methods of preparation, the taste of each type of coffee bean available here, and even some coffee history! Not surprising, as the owner is a Level 1 SCAA (Specialty Coffee Association of America) certified barista, and provides regular training for Kaldi's Berry staff.
Coffee Beans - Light Roast & Dark Roast

Coffee Beans - Light Roast & Dark Roast

Kaldi's Berry even holds regular coffee appreciation and brewing classes, every Wednesday 7:30pm - 9:30pm, and every Saturday 3:30pm - 5:30pm. The sharing and exchange of coffee knowledge covers topics such as, a basic introduction to the coffee making process, the 6 essential elements of brewing good coffee, the 3 main stages of the coffee brewing process, and more. Each 2 hour session typically costs SGD $$168 per person.
Kaldi's Berry is the first in Singapore to use the Cold Drip Method with a twin valve drip system from Korea, a process which involves steeping coffee grounds in ice cold water for an extended period of time.
The advantages of the Cold Drip Method include a refreshing, naturally sweeter coffee with lower acidity, which can be safely stored in the fridge for as long as 3 weeks. In fact, coffee produced using the Cold Drip Method is like fine wine, the taste profile actually changes and gets better when aged!
Coffeega Korean Cold Drip Coffee Maker Ridge 3.2

Coffeega Korean Cold Drip Coffee Maker Ridge 3.2

The fresh version, aged 1 day, already has a very smooth, easily drinkable texture, with a slight sweetness in the front, a lingering bitterness at the back, and an overall refreshing feel. The version aged for 5 days however, while having the same texture and refreshing feel, has much less bitterness, and more sweetness.
Food options at Kaldi's Berry are their weakest point, as the range is somewhat limited to mainly desserts and sandwiches. I've always had this nagging worry about true specialty coffee joints, that they focus too much on coffee and neglect the food. At Kaldi's Berry, I'm happy to say that the taste, quality, and quantity of food is above average, though there is room for improvement. Portions sizes are large for 1 person, and prices are reasonable for a cafe. Budget about SGD $8 or so per person for food alone.
The All Day Breakfast Set With Bacon & Ham (SGD $11.90) is probably the only 'main course' on the menu here. The scrambled eggs are soft, fluffy, and tasty with a dash of black pepper. The toast is slightly underdone, not yet crisp, but the salad vegetables are fresh and crunchy. The sauteed mushrooms are nicely cooked, earthy and savoury. The ham and bacon were well grilled, and paired well with the bread.
All Day Breakfast Set With Bacon & Ham

All Day Breakfast Set With Bacon & Ham

The Waffle With Strawberries, Bananas, Vanilla Ice Cream (SGD $6.90) is the largest dessert available on the menu. Served with fresh strawberries, bananas, and chocolate sauce, the fruits lend a fresh sweetness to the dish. The large scoop of vanilla ice cream I noticed was quite hardy, taking a long time to melt. The difference though, lies in the waffle batter, which is soft and bread like in texture, very different from other waffles elsewhere. Staff tell me that they are experimenting with infusing coffee flavour into the waffle batter!

Anyone with a passing interest should visit Kaldi's Berry, if not for the knowledge, then at least for their outstanding coffee beverages and friendly service. Kaldi's Berry is perfect for light bites, business discussions in a casual setting, leisurely afternoon dates, and chilling with a book.

Full Cook & Brew review here: http://ivanteh-runningman.blogspot.sg/2014/07/cook-brew-tasting-session.html

The Westin Hotel makes a return to Singapore after a 10 year hiatus, bringing along with it new dining concepts developed in-house, such as Cook & Brew. Making its global debut on the 33rd floor of Westin Hotel Singapore, Cook & Brew exudes an old-world elegance with a touch of modern chill, offering an extensive range of rustic, classic bar food with Western, Asian, and Fusion influences.
Cook & Brew Bar Area

Cook & Brew Bar Area

Ambience at Cook & Brew is a mesh of posh sophisticated elegance and rustic homely comfort. The dimly lit but spacious interior boasts plush suede leather booths, rustic cowhide armchairs, tufted leather benches, the longest marble-topped bar counter in Singapore, 90-inch flat screen televisions, and floor-to-ceiling windows. Seats are laid out in communal style dining, which is very much encouraged at Cook & Brew, as dish portions are designed for sharing. The best part is the fantastic view of the Marina Bay and Marina South area!
View Of Marina Bay & Marina South

Service at Cook & Brew is outstanding even during peak periods. Staff are friendly and polite, efficient in seating guests, taking orders, and clearing empty plates. The food takes awhile to prepare from scratch, but served quickly. Staff are able to offer recommendations on the extensive wine and beer list, and relatively knowledgable when questioned on the food menu and dish preparation. They are also able to state what sporting events the in-house televisions will be screening for the day.
Food at Cook & Brew is generally delicious and tasty. The menu at Cook & Brew is quite extensive, featuring classic, rustic Western style comfort food, as well as local Asian dishes, served with a modern twist. Several dishes even come with recommended beer pairings! Portions are designed for sharing, not so much individual dining, and prices per portion are reasonable and quite affordable. Budget about SGD $20 - $50 per person for both food and drinks.

The Chili Con Carne Volcano Topped With Cheddar Cheese (SGD $13) is like a Western style Char Siew Bao. The minced beef within is well marinated in a savoury, slightly spicy sauce, while the actual bun itself is fried, with a crisp, smooth exterior and a soft interior. Topped with bell peppers / capsicum, cheddar cheese, and a fresh jalapeno slice, it's a great tasting if slightly heavy appetizer.

The Honey BBQ Ribs (SGD $28) features a slab of perfectly grilled baby pork ribs, sweet and savoury with the taste of the honey marinade and Asian spices like the Rendang rempah. Served with a side of freshly made in-house coleslaw and crisp potato wedges, the pork rib meat comes off the bone easily, and is tender and flavourful. The pairing with Beer Blue Moon accentuates the sweetness of the dish, and works very well together.

The signature German Butcher Platter (SGD $34) contains a huge serving of pork kassler, pork sausage, chicken sausage, chicken schnitzel, sauerkraut, dill pickles, mashed potato, and mustard. Every individual component in this dish was well cooked and tasty, and we were very satisfied with this!

I loved the Almond Nougat Ice Cream (SGD $15) with its praline-like structure, and tasty, flavourful almond nougat ice cream within. Served with fresh raspberries, shaved caramelised almonds, and a condensed milk base, it's so satisfiying to crack open the chocolate shell and watch the ice cream ooze out.

Take On The Spicy Challenge (SGD $20)! Eat 6 hot and spicy wings / drumlets within 4 minutes, and get 1 hour of free beer! There's a reason this is a challenge, a combination of chilis and peppers are used in the making of this diabolical dish, including the world's 3rd hottest chili. The heat and tangy sourness of the aroma hits you up close, and the burn starts the minute you bite into it, building to a mouth numbing fiery crescendo.

Overall, I had a great time at Cook & Brew, and will definitely come back for more! The delicious food, relaxing ambience, and engaging service, together with the view from the area, makes for an unforgettable experience. No surprise that Cook & Brew attracts so many diners night after night, and advance reservations for a seat is highly recommended!
