I'm on holiday in Singapore and was looking for a cheap, quick meal before heading back to my hotel. Instead, I stumbled across a wonderfully scrumptious dinner! I had the BBQ chicken dry noodles (option 5 on the menu), and it was the perfect balance of flavours: salty, umami, sweet, sour (and a hint of spice if you add the chilli). Of all the options in Food Republic, I settled on this one, because it looked most balanced in terms of having both meat and vegetables (so many other places seemed very protein heavy). The noodles were soft with a bounce to its bite; the chicken was grilled had a crisp bite, tender flesh inside, and a sweet glaze; the dish was contained really fresh lettuce, and a salad of julienne carrot and mango - a really succulent and fresh balance to complement the meat. This was all washed down with a simple but refreshing broth that was served with the noodles on the side. I was thoroughly happy that my "quick and cheap" meal turned out to be such a delightful surprise!

I don't usually bother to send compliments to the chef in a food court, but this time, after finishing my meal, I did go back to the counter and thank the staff. It turns out they are actually from Vietnam, which explains why the food is so good and authentic!
