the amount of plain flour use depend on the fish paste absorption, eg if the fish paste is very wet, it requires more flour, otherwise, less flour, the dough should be dry and soft on touch.

Method
1. slowly add plain flour into fish paste, till lightly sticky on fingers 2. knead it till smooth, this stage may need more flour if it is still wet, or need some water if step 1 add in too much of flour 3. the dough should be pliable, soft and dry when touch, not too hard or too dry. 4. use the noodle machine, roll flat the dough for at least 6 times in few portions 5. use the detachable noodle cutter to cut the flat dough into thick or thin noodles 6. dust the cut noodle with more flour, to prevent them stick together 7. boil it with plain/light salt water, then rinse under running water 8. it is now ready to stir-fry or boil with other ingredients
Tips
1. pay attention to the fish paste water content, too wet need more flour, too dry put less flour 2. commerical fish paste is salty enough for the dough 3. bread flour will add a bit of chewy, plain flour is also fine
