This recipe makes use of a few other ingredients to create some excitement to this simple dish. Parmesan was added to give fragrance and subtle cheesiness, A little garlic was roasted to pack an oomph; and finally, fried bacon was added for texture.
5 medium sized potatoes (yukon or russet) 5 bacon rashers half cup of grated parmesan cheese off a block 30ml fresh milk 5 cloves garlic olive oil salt and ground black pepper
Method
1. Wash and peel the potatoes. Put them into a pot and fill up with water and boil for about 15 minutes until the potatoes can be pierced through easily by a fork. drain the potatoes and leave aside to cool. 2. Lay the bacon rashers in an oiled baking tray and slot into a pre-heated oven of 150 degree celsius. Cut the garlic into halves, drizzle olive oil and wrap up using aluminium foil. Slot into the oven as well. Cook for 15 minutes. This step can be done when the potatoes are boiling. 3. Mash up the potatoes using a masher or simply by using a spoon or fork. When mashed until the desired texture, stir in grated parmesan, rendered bacon fats, milk and roasted garlic. Mix the potatoes well. Taste the mash and season with salt and pepper to liking. If more creaminess is desired, add in some melted butter. 4. Lastly, break up the crispy bacon into bits and sprinkle over mash.
