Tired of having the same old scrambled eggs every morning? Why don't you prepare this recipe instead!
Ingredient and Portion
(A)
6 to 8 hard boiled eggs ( I used small eggs )

(B)
300g minced meat (can use pork, chicken or beef) OR 1 can of luncheon meat
2 medium potatoes - boiled, peeled & mashed, leave to cool
1 stalk spring onions (cut finely)
1/2 tsp sesame oil
1/2 tsp Chinese wine
1/4 chicken granules (optional)
1/2 tsp salt
dash of pepper

(C)
2 eggs - beaten

(D)
8pcs of cream crackers (crumbs)
Method
1. Mix ingredients (B) together in a bowl.
2. Wrap eggs with mixed ingredients & place on a plate.
3. Fill 1/3 height of oil in pan & switch on low heat.
4. Coat with beaten eggs carefully & roll over biscuit crumb.
5. Do step 4 one at a time and put onto heated oil.
6. Once all eggs are in pan, turn fire to medium-low heat.
7. Turn the scotch eggs carefully and fry till golden brown.
8. Dish up & drain off oil.
