For this dish, you can adjust the level of spiciness with the Spicy Bean Sauce (四川豆瓣酱).
Ingredient and Portion
(A)
1 whole Chicken Breast
1 Egg White
1 pinch of Salt 
1 pinch of Pepper
1 tsp Corn Starch

(B)
1 tbsp Hoisin Sauce
1 tbsp Oyster Sauce
1 tbsp Spicy Bean Sauce (四川豆瓣酱)
1 tsp Chinese Wine (绍兴酒)

(C)
1 tsp Sesame Oil
1 tsp of Ginger cut to thin strips
1 clove of Garlic sliced
4-5x Dried Chilli (Soak in hot water for 5 mins and remove seeds)
Mixed Vegetables (Optional)
3 stalks Spring Onion 
Chinese Parsley
Method
1. Sliced chicken breast into slices
2. Marinate chicken with salt & pepper
3. Beat egg white and add to chicken
4. Add corn starch
5. Mix (B) well

6. Stir-fry mixture (A) until cooked. Set aside
7. Add sesame oil. Stir fry ginger, garlic and dried chilli
8. Add cooked chicken, stir fry together
9. Add mixed vegetable (optional)
10. Add (B) & stir-fry till well mixed
11. Add spring onion & parsley. 
12. Stir-fry for about < 1 min and serve
