After having a walk in the Food republic situated at Parkway Parade, Lam's Salt Baked Chicken was one of the stalls that really attracted me as prior to this, I had never even heard of such a dish before and therefore decided to give it a go.I ordered the Salt Baked Chicken Thigh with Mixed Rice ($6.30). The mixed rice tastes rather similar to traditional chinese rice dumplings (bazhang) with pieces of tender chinese sausages in it. Each set comes with rice, chicken, kailan and soup. The thigh was well salted with the flavour seeping into the meat as well. It was tender and came off fron the bone easily and was pretty decent in size. The vegetables were fine but nothing to shout about, but the soup was glistering with bubbles of oil on the surface. This place is known for one thing and one thing only, their salt baked chicken. This dish is increasingly difficult to find nowadays! Though it is expensive, a small chicken costs more than $20, the chicken is very delicious. It is very moist and tender and the salt taste is evident but not overwhelming. Overall a great dish and great eaten with rice for dinner. continue reading

Lam's is known for their abalone noodles and of cos, the salted baked chicken along balestier road. Was around the area and saw they actually have a stall here in Food Republic so I decided to try it and see if the standard remains the same as their main branch. As they only have the salted egg baked chicken available in their menu, I decided to have one with plain white rice. The presentation is presentable, with a huge chicken leg, 'rounded' plain rice and green vegetable. The chicken is surprising soft and the meat was separated from the bone easily. It was well marinated and you could taste the saltiness in it too. The rice however is a little too wet for my liking. Overall a nice and enjoyable meal! continue reading
