訪星加坡期間,親戚帶我們到中峇魯熟食中心覓食,「許兄弟豬雜湯」是那裏一間著名食店,恰巧外子最喜歡此食物,在香港也層次光顧皇后街市熟食中心某店。豬雜湯是潮式食品,低本心機菜式,新鮮豬雜要澈底清洗、啤水、刮脂、粗鹽洗、沖水、出水後再熬煮兩、三小時。那天中午去到店前,已見長長人龍,我們排隊等了二十分鐘左右才買到,買了兩碗,每碗約港幣三十元。坐下呷了一口湯,無比清甜,完全不帶半點豬雜腥味,湯內有數塊豬腸、豬肝、豬腰、豬心,數片瘦肉片及兩粒肉丸,樣樣鮮甜軟腍,非常好味,還有幾片綠色鹹酸菜配搭,更添風味。吃完一碗再排隊買多一碗分吃,美食當前,顧不了年紀大要注意飲食健康了。😄😄 continue reading

The broth is always the soul of a good pig organ soup, freshly brewed daily from pig bones and mustard vegetables; the soup comes with the natural sweetness from the pig bones and a tinge of saltiness from the mustard vegetables. Soup is clear and every spoonful was a delightful taste.Another crucial factor will be the organs that go with into the bowl of soup, the intestines were clean and you don’t get the pungent smell from the viscera parts. All the organs e.g. pig liver, belly, lean meat were tender and cooked to the right texture. We can say that everything went into the bowl of the soup were nicely done up and to differentiate from other pig organ stalls. The glutinous rice with stuffed chestnuts wrapped in the pig intestine; this is another popular item from the stall well received by many of the patrons. The glutinous rice was cooked to perfection, the gooey of the rice was impregnated with the flavour from the intestine as well as the sweetness of the chestnut, a lovely side order that you should go for it before it is vanished from our scene and can only be found in our food legacy. Checking out this area of stalls that have human dragon queues and I’ve heard of an uncle always seated while serving.Pickled mustard in clear pork flavoured broth tasted light but with a tinge of saltiness (from the preserved vegetables) and all combined has a great strong aroma from prolonged boiling hours. Drinking the soup did not make me feel thirsty at all, which means there’s little or none MSG (MonoSodiumGlutamate). Pork intestines were well cleaned and did not have any unpleasant tastes of innards. Usually these are cooked and with chewy texture, however for Koh Brothers’ , it was soft and tender. As lean meat was main choice of pork cuts instead of pork belly, eating from this bowl did not have the “gelat” / “greasy” aftertaste. Pork balls were firm , bouncy , tasted even better with the chilli dip. This is truly a great dish and worth queuing for. continue reading

The FoodI ordered the Pig Organ Soup with rice. This clear and strong broth with heavy pork flavoured goodness in taste with slight sourness from the preserved mustard vegetables inside tickled my taste bud which made me drink mouth after mouth. There was no MSG at all because with a whole a lot of fresh ingredients of liver, stomach, lean meat, meat ball inside is enough to make the soup veri sweet and tasty. The ServiceAs the stall is very famous for its mee siam, hence not surprised there is a long queue especially on weekends.The AmbienceAs the stall is in hawker center, i find that the place was well-ventilated and not stuffy due to spacious space.The PriceReasonably priced at $3.50 per bowlOverallI will definitely come back again and highly recommended to try this for all pig organ soup lovers! continue reading

Somehow, if you follow the queue, more often than not, the food will be at least average. This stall commands quite a queue during lunch, so I joined in as well. I ordered the pig's organs soup and a bowl of rice. There are the pig's liver, pig's intestine, pig's stomach etc in the soup. In addition, there is also salted preserved vegetables which I thought helped made the soup even more flavourful and tasty. The different types of organs are all washed properly so there is absolutely no smell/taste. The liver is also not overcooked which made is very tender and easy to bite. I like dipping the ingredients into the dark soya sauce and eating it together with the rice. Delicious! continue reading
