One-Night Wine and Dine Event at The Jewel Box

It was an evening of fine wine and gourmet food held at Singapore’s iconic hilltop destination. On 12 March 2013, The Jewel Box held a one-night event for foodies and wine enthusiasts to sample a four-course dinner paired with a fine selection of Shaw+Smith wines. Held at the private dining room which boasts a magnificent view of sea and nature, the guests were first welcomed with pre-dinner cocktails before they were ushered to their designated tables.

To officially start dinner, Michael Hill Smith, who is Australia’s first master of wine and owner/chief wine maker of Shaw+Smith Wines, gave an opening speech about what diners could expect from this exclusive dinner. Aside from being served with gourmet food, he was also excited to announce that they would be sampling six highly-acclaimed wines from Adelaide Hills, Australia. One of these was the Shaw+Smith M3 Chardonnay, which made its debut in Singapore that night.

After a toast and round of applause, everyone settled in their seats and prepared for a gastronomic feast. First up were Canapés and Amuse Bouche paired with the Shaw+Smith Sauvignon Blanc 2012. With an intense flavour which just bursts in your mouth, this sure was a great drink to capture everyone’s attention. Now that they have kick-started their palates, they were then served with a variety of Tasmania Ocean Trouts. This was a memorable starter for the fish was fresh with an almost melt in your mouth texture. It also had a mild taste so it won’t compete with the alcohol pairing. For this dish, two wines were given: the M3 Chardonnay 2010 and 2012. Though each has different characteristics, both just made the fish twice as flavourful.
Homemade Spattlecock Pie with Wild Mushrooms, Australian Short Ribs, and Pavlova with Lemon Syllabub, Mix Berry Compote
For the second course, diners were served with Homemade Spattlecock Pie with Wild Mushrooms and Shaw+ Smith Pinot Noir 2012. With a hint of fruit in its flavour, it was the perfect accompaniment to this rich but tasty dish. As for the main dish, guests enjoyed a composition of Australian Short Ribs. To complement its strong flavour, it was matched with the full-bodied Shaw+Smith Shiraz 2010 and 2007. Now, the evening wouldn’t really be complete with desserts; so for this part, the chef prepared a special Pavlova with Lemon Syllabub and Mixed Berry Compote. This refreshing dish was served with either tea or coffee to sum up the perfect ending to a great meal.
