Sake Dispenser
A post-paid card is used to work the dispenser, where you’ll be able to select your preferred sake and portion size: tasting (20ml), half (60ml) and full (120ml). Prices are kept affordable from $2.20 for a tasting glass of Ichinokura Himezen Sweet, a delicate rice wine that makes a great aperitif.Dried Fish Grilled Irori Genshiyaki-style
The latter brings an aged-old delicacy like dried fish to whole new level by intensifying its natural flavours, before skewering and firing it up irori genshiyaki style. In this ancient Japanese method of charcoal-grilling, the fish is slow-grilled vertically in front of a stack of charcoal. The result: Moist and tender flesh beneath a crisp exterior with a smoky char. Here, freshly imported dried fish changes on a daily basis but a mainstay to try is the Grilled Yellowtail Collar with Salt ($20.80), a naturally oily fish seasoned with just a dash of salt. Other recommended dishes to try: Fresh Bluefin Tuna Sashimi Steak-style ($68), Ryoshi Mushi (open price), Sumiya Tropical Dessert ($18.80) – served in a hand-carved ice bowl and limited to 15 servings a day (pre-order advised) and Pumpkin-filled Karinto Manju with Matcha Ice Cream ($8.80, pictured above).Written by Peh Yi Wen
