I have written about Sergeant Kiang and Sergeant Kiang's Kitchen in December 2011. [ http://sg.openrice.com/singapore/restaurant/commentdetail.htm?commentid=22569 ]The Sergeant Kiang's Kitchen has since closed down in April 2012.The Kopitiam Group invited Sergeant Kiang to oversee the chicken rice stalls in their food centres. The first chicken rice stall under the supervision of Sergeant Kiang started at Hougang 1. There are 2 other stalls at Seng Kang and Bukit Panjang Plaza now. And, Sergeant Kiang is currently stationed at Bukit Panjang Plaza overseeing the newest stall there. This food review was done when Sergeant Kiang was still there. I ordered half of his signature white chicken with 2 plates of rice.The texture of the chicken has got a delightful tenderness and noticeably juicier. The rice cooked well to achieve the grainy texture with a nice flavor of chicken broth. The usual condiments like the chilli, ginger paste and the dark sauce served along with the chicken rice. I could taste the amount of chilli padi used to intensify the level of spiciness. The taste was balanced up by the right amount of lime and ginger added. The ginger paste tasted rather smooth and fresh. The dark sauce used was the thick and sticky type.
