The concept of fusion food has been around for a long time. Combining different flavours from different ethnicities and countries around the world, is well-loved by many. Thankfully, Chef Asai Masashi of Bincho and Chef Manel Valero of Moosehead Kitchen - Bar are collaborating for the first time to bring you unique dishes that combines the distinct flavours of both Japan and Spain.
Chargrilled Octopus with Red Pepper and Lime
From 1 to 31 October, diners can treat themselves to these new fusion dishes. At Bincho, Chef Asai will be transforming three of Chef Manel’s dishes, one of which is his signature Chargrilled Octopus with Red Pepper and Lime ($35). Chef Manel will be putting his spin on three of Chef Asai’s dishes, including his famous Beef Tongue ($25).

Both chefs were inspired by each other’s dishes after dining at their restaurants; hence they decided to create an interpretation of each other’s dishes. Having different sets of cooking skills and techniques, unique to their homeland, the dishes they create will not only be one of a kind, but also have a cornucopia of exotic flavours.
