Heirloom Tomatoes & Burrata Salad

A healthy alternative to your usual beef and pork is this healthy salad from Novus Restaurant's Chef Stephan Zoisl. Made from marinated heirloom tomato salad, burrata cheese, avocado, and extra virgin olive oil, this is an easy-to-prepare dish which you can enjoy without guilt!
Serves 1 500g Heirloom Tomato 350g Burrata Cheese 100g Celery 2 nos Avocado 30g Icing Sugar 50ml Cabernet Sauvignon Vinegar or Pedro Ximenez balsamic vinegar 100ml Olive Oil Merula/Marques 50g Shallots peeled 20g Garlic peeled 50g Red Radish Garnish: Basil leaves, celery leaves, purple shiso Preparation:
Tomato:
- Slice the tomatoes into desired size, about 1cm thick.
- Season with salt & pepper, chopped garlic and shallots.
- Marinate with vinegar & olive oil.
Buratta Cheese, Celery & Avocado:
- Slice the celery and avocado into desired sizes.
- Slice the burrata cheese and remove excess moisture.
Assembling:
- Create a tower of tomato, avocado and celery.
- Add the mozzarella cheese.
- Garnish with basil leaves, purple shiso, and celery leaves.
- Finish with some drops of extra virgin olive oil.
