Not to be misconstrued as “just another café” in Singapore, The Missing Pan is a five-month old bakery and brasserie located in a two-storey shophouse along Bukit Timah Road, a stone’s throw ahead from Coronation Plaza. Freshly baked artisanal bread can be purchased from the bakery on the first floor, or even through the bread window for any quick takeaways. The wide range of doughy and natural goodness includes ciabattas, focaccias and organic sourdoughs – all baked on site without the use of preservatives, additives or flavourings. From an online organic bakery business to a sandwich / salad bar in the CBD, the husband and wife team behind The Missing Pan now seeks to entice you with their imaginative take on modern cuisine with this new “child” of theirs. While lunch and dinner menus are expecting some upcoming changes, we’ll testify for the following brunch must-tries first.

This flamboyant and unconventional French Toast Salpicon sets the tone straight for the rest of the brunch line – refreshing and out of the box. Served with a side of strawberry-smoked maple syrup, the classic French toast platter is snowed over with icing sugar. Only, it isn’t really all that classic. Garnished with fresh berries, kiwi, plus both raw and pan-fried bananas on the outside, slicing the two-inch thick brioche leads you to a rather savoury surprise. Much like a piñata, a combination of mushroom, chicken and spinach is stuffed inside and the sweet and savoury flavours do harmonize well to please.

And for your mandatory dose of eggs, their 62 degrees Eggs Benedict with Smoked Salmon may look like your ordinary hollandaise goddess. But what really sets it apart is the layer of smoked salmon. Infused with far less salt, it is a whole lot fresher and cleaner to the bite, going nicely with the avocado and sourdough that is scattered with seaweed crumbs.

Also on the menu are the Guinness Pot Pie and Beetroot Quinoa Salad. The former is a hot and hearty beef stew with the aroma and hints of Guinness – perfect on a rainy day, while the latter offers a refreshing mix of candied beetroot, quinoa and arugula paired with herbed flatbread strips – great for those looking for a lighter bite.

Desserts can be tricky when deciding whether to take the sweet or savoury route. The Mela Con Formaggi gives you the best of both worlds. What you get on a stone platter is a carefully curated line of granny smith apples, citrus mascarprone, homemade honeycomb and parmigiano reggiano chips drizzled over with banana caramel sauce, plus a chocolate soil path that follows. The best way to eat this? One big scoop with everything in it.

The same goes for cakes. “Do I get that amazing-looking cheesecake? Or that to-die-for brownie?” At The Missing Pan, go for the Cheesecake Brownie. With the cheesecake on top and the brownie on the bottom, this is one dense delight we wouldn’t reject. Moreover, we’re definitely giving the separate layers a thumbs-up. This way, you can choose to enjoy either flavour on its own or both at once. Here, the coffee is brewed using a special blend customized by a local roaster.
