Steamed, Su Dan fish, rice broth, “Teochew” style.

Upon the first bite, I'm in love with the softness and tastiness of the meat. The soup is soaked with the essence of the fish and is full of flavour, there is no need to dip it with soy sauce. The fish is so fresh and I am pleased with the high quality dish. But there is one thing I would like to point out, be please careful when consuming the dish as there are lots of tiny bones in it.

The signature "Kopi" Crab is the main highlight of the night. 

When the crab was flambeed with rice wine and coffee liqueur, our table was immediately filled with the strong aroma of coffee. The kopi crab has got a rich taste of caramel and coffee with the sweetness done to perfection. I must say the dish is innovative, I have never thought of such combination before. It is definitely worth giving a try, your meal at Majestic Bay will not be complete with it

Sambal water spinach is my favourite vegetables dish, I will never failed to order this is any restaurant. Simply love the sambal taste.

Sweet’s temptation

A sweet end to the meal. We had the dessert platter which consist of Pancake with Red Bean Paste, Steamed Custard Buns with Salted Egg Yolk, Black Glutinous Rice Dumpling with Yam Paste Stuffing and Shredded Coconut, and Glutinous Rice Dumpling with Fresh Cream Stuffing.

Pancake with Red Bean Paste was my second favourite, it was yummy good.

My favourite of all was Steamed Custard Buns with Salted Egg Yolk. The custard bun was caught in the middle of sweetness and salty. I loved it so much, especially when the filling came flowing out when you bite it - the fusion of salted egg yolk with the bun. It's mouthwatering!!!

Soothing wood tones and tastefully chosen crockery and linens create a
homey,welcoming vibe among the Gardens. With transparent glass panels overlooking to the path where people are strolling, cycling or even jogging in the evenings did boosts one's energy in one way of another seeing lively activities around.

Warmly welcome by fish tanks of live seafood while we make our way into the restaurants to our seats. For those who are having live seafood, get to choose their catch of the day from the tank.

Menu came in hard copy as well as digital format. I thought it was good to have dishes illustrated in the electronic device as the hard copy menu has no pictures for someone like our guest who was not so familiar with Chinese Cuisine.

Having double boiled soup served in coconut is definitely a new addition to my dictionary. Assorted seafood like prawns, scallop, fish maw were included with mushrooms and white fungus.

Undeniably the best Espresso Pork Ribs I had ever eaten. I'm not a coffee person but this boneless and lean pork ribs were wholly aromatic and light on the palate. Simply love its evenly coated Expresso Coffee Sauce over the tender ribs.

Sauteed asparagus was well stirred fried with fried garlic, carrots as well as mushrooms. Asparagus were totally crunchy and "sold out" on our table very soon after it was served.

Serving brought me a surprise as it was quite small. However, the miniatures abalone had stolen the scene. It was topped together with chopped carrot cubes as well as spring onions on the softened Mee Sua.Unfortunately, the taste of the broth came with a strong hint of seafood smell, more towards the crustaceans taste and wasn't too pleasing to everyone of us on the table, thus we ended up wasting abit of the food.

Servings seemed petite initially yet keep our groaning empty stomachs full at end of everything. Overall Majestic Bay reminds me of some Chinese Fine Dining. Besides its strategic location in Gardens By the Bay, I would say it was a good recommendation to bring a guest there as the ambiance was quiet with attentive services from the working team. Totally suitable for causual business meet ups. After all my guest from aboard seemed to be satisfied with this dinner.

Last weekend, I had lunch at Majestic Bay Seafood Restaurant. This is located at Garden By The Bay – Flower Dome. When you are at the main reception area of the Flower Dome (where you can purchase tickets for the flower dome), take the escalator down to the lower level, and its on the left of the escalator.
Here are the highlights of my meal:
- - Dim Sum
o Signature Chilli Crab Meat Bun: Done as a dim sum, where the crab meat is cooked with non-spicy chilli gravy and wrapped in a bun that is pan fried. Not spicy and it was nice.
o Scallop and Prawns Dumpling: This is done like a fried wanton. It has cut up prawns and sliced scallops filling. Good.
o Minced Pork and Yam Dumpling: Minced pork fillings in a mashed yam ‘cocoon’ that is deep fried. Crispy on the outside and a good dim sum dish to order. Try it!
o Steamed Vegetable Dumpling: Assortment of chopped up vegetables in a crystal dumpling.
o Shanghai Pork Dumpling: This is popularly known as Xiao Long Bao. It is a minced meat filled mini bun, which you dip into vinegar with ginger slices.
- Alaska King Crab Meat Soup with Minced Celery: The soup was slightly greenish in color, due to the minced celery and scooping in the soup, there was steamed custard at the bottom. I also got pieces of Alskan King Crabmeat in the soup. I personally found the soup a little salty.
- - Dragon Tiger Garoupa done two ways -
o Stewed withTofu sheet, Wild Mushrooms in Claypot: This is my first time tasting the Dragon Tiger Garoupa, which sounds very exotic. The fish has been deboned and filleted. It was stir-fried with 1cm wide cut pieces of tofu sheets and straw mushrooms in a claypot. I preferred this to the garoupa steamed with minced garlic.
o Steamed with Minced Garlic: Topped with roughly minced garlic and steamed. There was a coating of starch on the fish fillets, which made the fish slightly chewy. Would have preferred the fish not to have the starch coating, so that I could taste the fish properly.
- - Crispy Shredded Duck, Jiang Nan Style: The duck is shredded apart and the pieces are deep fried. The dish is topped with fried taro strips and julienned mango. I found the duck a tad too dry for my liking. I loved the fried taro and mango that topped the dish though.
- - Braised Homemade Tofu with Chinese Mushrooms in Abalone Sauce: The tofu were deep fried till golden brown on the outside. The Chinese mushrooms were big and juicy.It came with blanched Romaine lettuce that were crunchy.
- - Stewed Bee Hoon with Boston Lobster: Each person got a piece of boston lobster that has been stewed with medium rice vermicelli. The Vermicelli soaked up the gravy and was tasty.
- - Fresh Mango Puree with Chendol Strips: The first time I am drinking it out of a tall cup, instead of eating with a spoon.
I will be back soon to try out their steamed yellow duckling bun filled with Nutella and Yam paste.

Though Majestic Bay is not a popular place for dim sum and the dim sum selection is quite limited BUT to my surprise, they have creativity and quality! Had a really 1st birthday treat from a friend to July babies this year me and my friend and also passing us some passes to ice skating for the experience and fun. Well, I was late for an hour due to other event and miscommunication and glad they still wait for me and the restaurant allow too. First they pour all sorts of sauces and liquids all over it and then they flambé it at your table. It's a cool sight.I thought the taste needed some getting used to. The 110-seater restaurant is cozy with a nautical theme to resemble a ship deck. Rounds mirrors line the wall to resemble the potholes with light oak floors and the corporate colour is auqamarine.

As you walk into the restaurant, you will be greeted by a wide variety of live (fresh) seafood in the water tanks ranging from Crabs, Fish (Empura, Turbot), Geo Duck Clams, Bamboo Clams to Lobsters.

The Assorted Seafood Soup was served in a whole young coconut. In it, there were mushroom, prawn, scallop and bamboo pith. The soup was tasty with the sweetness of the scallop and prawn extracted into the soup. In addition, there was a light mushroom and coconut flavour. The ingredients used were fresh. The mushroom used was fresh and not the dried version. Similarly, the scallop used was the fresh version. It was big and chunky, so much so that when I bite into it, the flavour of the scallop could still be savoured. I would have though that the prawn in this case would be overcook. But I was wrong. It was cooked just right and was firm and fresh. The best part is that after drinking all the soup, you can use a spoon and scrap off the coconut flesh easily. =)

You would not have been to Majestic Bay Seafood Restaurant if you did not order their signature crab; Bay's Signature 'Kopi' Sauce Crab. Having said that, of course there are other ways to savour your crab if you prefer; Chilli Sauce, Black Pepper, Steamed with Shao Xing, Sauted with Spring Onions and Ginger or Stewed with Bee Hoon.

Bay's Signature 'Kopi' Sauce Crab was created by Chef Yong and there is no doubt that this is a uniquely created in Singapore Dish. It is cooked with a blend of 3 varieties of coffee beans, along with apple jam, orange juice and marmalade. At the serving table, it is set alight with a alcoholic mixture to give an extra oomph of fragrance and caramelisation.

I must say that this is a very unique way of cooking a crab. Although I am not a coffee person, I found the 'Kopi' sauce extremely addictive. The intense coffee flavour couple with the sweetness left me longing for more. The crab was fresh and meaty. Its meat could be easily pull out and was firm. Coffee lovers (addicted to coffee/ requiring at least a cup of caffeine fix a day) will definitely love this!

The Braised Baby Abalone Mee Sua stole the show. It was simple yet delicious. The braised baby abalone was so soft, tender and flavourful. The Mee Sua was tasty having absorbed the rich, tasty and creamy broth. It was so irresistible that I finish the whole bowl (including the broth). Mee Sua is my type of comfort food!

The Doubled-Boiled Peach Gum and Chinese Pear was served cold. The sweetness from the different ingredients were extracted. The Peach Gum deserved a special mention as it was soft yet flavour and sweet.

Although I am not a fan of fresh cream, the Glutinous Rice Dumpling was saved by the skin of the Glutinous Rice Dumpling (Yes, you read this correctly! The skin!). The skin was extremely soft. It was made from scratch by Chef Li Shou Tao who is their Dim Sum Chef with over 20 years of experience! Wow man! I can't wait to try their Dim Sum one day!

Overall, I must say that I have tried several unique dishes during this visit, some of them for the first time in my life (now I sound like a suaku). It is interesting to see the innovative way the different ingredients are combined to create a dish. It is hard choosing the best 2 dishes I ate that day. But if I have to recommend 2 dishes, it would be the Braised Baby Abalone Mee Sua and Bay's Signature 'Kopi' Sauce Crab. I hope that I get to try their Dim Sum one day. If you have tried it before do let me know.

Combining preeminent seafood with adept dim sum making skills, the plump Steamed Fresh Prawn Dumpling, also known as ‘Har Gao’, is an exemplary item packed with fresh succulence within a thin translucent skin.

The Baked BBQ Pork Bun is unlike your typical Char Siew Pau. Baked to a golden buttery sheen on the surface, the light airy bun encases flavourful pork filling within.

The Seared Chilli Crab Meat Bun is a personal favourite. This is genius adaptation of chilli crab with ‘man tou’ –without the hassle of de-shelling and getting your hands dirty.

I LOVE SOUPSSSSSSSS. Soup lovers will not be disappointed. Boiled for a great deal of hours, the soup is endowed with all the natural goodness and flavours from the ingredients.

The soup of that day was Pork Rib Soup with Sweet Corn, Red and Green Carrot.

Sautéed Wild Mushrooms and Asparagus ($18 for 2-4 pax, $27 for 5-8 pax)

Asparagus is one of the very few green veggies that I do not hate. The Sautéed Wild Mushrooms and Asparagus is faultless. Mum, I’m eating my greens!

Hot Plate of Chef’s Recipe Tofu with Seafood ($16 for 2-4 pax, $24 for 5-8 pax)

The Hot Plate of Chef’s Recipe Tofu with Seafood makes a dramatic arrival with an ensemble of sizzles. While waiting for the blistering temperature to recede, we were already making mental notes on the alluring aroma. Delicious and tempting as it is, be careful not to burn your mouths!

Live Crab with Bay’s Signature “Kopi” sauce (Market price)

One of Chef Yong’s proudest creations would be the Live Crab with Bay’s Signature “Kopi” Sauce. Sparked by his love for coffee, he spent months of intensive research and experimentation before developing an innovative dish that one can describe as uniquely Singapore.

The special coffee sauce is made from a blend of 3 different varieties of coffee beans. The addition of apple jam provides sweetness to balance the bitterness of coffee.

Before consumption, the crab is showered with Chinese white wine and gets lighted up in flames. The robust aroma of coffee is further accentuated during this process.

Baked Rice with Assorted Seafood with Chef’s Recipe Sauce ($68 for 4-6 pax, $88 for 7-12 pax)

Another dish worthy of attention is the Baked Rice with Assorted Seafood with Chef’s Recipe Sauce. Served in a large paella pan that the rice is cooked in, you can find quality ingredients such as baby abalones, scallops, mussels and prawns scattered amongst fragrant rice.

The spiced cream sauce gives you a hint of curry flavour without overpowering the seafood. The mozzarella cheese – baked to a golden crust and melty goodness – binds the entire dish together.

To reach the climax of enjoying this dish, scrape off the charred rice crust that’s stuck to the bottom of the pan, with gusto I must add. That’s the best part in my books!

If you have trouble deciding what to order for dessert, the Sweet’s Temptation offers a variety of four desserts to share among your group.

The platter comprises of: Glutinous Rice Dumpling with Yam Paste Stuffing and Shredded Coconut, Glutinous Rice Dumpling with Fresh Cream Stuffing, Steamed Custard Bun with Salted Egg Yolk and Bay’s Chinese Pancake with Red Bean Paste.

The Steamed Custard Bun with Salted Egg Yolk oozes with molten salted egg yolk custard. For me, one definitely isn’t enough to satiate!

Bay’s Chinese Pancake with Red Bean Paste is another must-try dessert.
