The word ‘shirako’ means “white children,” it is the cod milt and is the best produce in winter. The cod milt was slight grilled with a crispy outer layer, remain the inside creamy and smooth – just like the texture of tofu.

The scallops underneath were very fresh and tender, enhanced by the awesome homemade egg yolk sauce, and topped with fresh Ikura, the whole dish was really Umami.

An alternative choice besides the savory version of Kinki fish, the simmered Kinki fish with homemade sauce comes with a twist of sweetness.

Sweet ending

In addition to exquisite Japanese cuisine, we particularly enjoyed the elegant ambiance with scenic views of the garden, and high quality service which feel like in Japan. They also serves weekend Kaiseki brunch at a affordable price of $75++. Keyaki is definitely a great place to go if you love Japanese food but have no time to travel to Japan.

Eventhough this restaurant is quite popular for their fine dining experience for their Japanese dishes, but I personally prefer their desserts over to their main dishes here. ]The new Keyaki boasts a beautiful guest-holding area welcoming guests, waiting to be seated. While the culinary retreat was imbue with the tranquil ambience at the Level 4 of Pan Pacific Hotel, in the hush of classic layout set in a strong Japanese accent, it features the art of Japanese gourmet cooking.

I’d opted for the Tsuki (Moon) set @ S$170/person. The course began with a serving of interesting appetizers & a clear soup; each emitting a unique taste, making me hunger for more.

Next is a dish not many can resist. Freshly flown from Japan was an array of Sashimi, each testing your taste buds.

Now this is my favourite part of Teppanyaki, seeing the Chef perform in front of you. The set came with a King Prawn, nicely grilled & cut before my eyes. The succulent prawn was fresh & inviting, with no sauce needed at all.

Then cames the highlight of the S$170 course – Wagyu Sirloin Steak. My eyes were glued to the teppanyaki grill as the Chef cleverly displayed his cooking technique. Just looking at the marble on the beef, I was sure it was gonna melt in my mouth.

Nothing can satisfy the the carnivorous urge for steak like a deliciously tender cut, served with a hearty portion of fried garlic. What I love most: salty crispy pieces of fats that the Chef had skilfully sliced off from the beef & grilled till crisp. I could die for a dish like this; every slice of beef just "dissolved" in my mouth. Definitely a cut above the rest.

Next on the grill were rice & eggs. Tada! Here’s a bowl of fragrant Garlic Fried Rice. Dracula will definitely stay away from me after this

I like this combi of bean sprouts, zucchini & eggplant. It blended well with the fried rice.
Lastly, something I couldn’t go without – Macha Ice-cream!

It’s traditional Japanese fine dining with top-notch food @ Keyaki. This meal is totally worth it, as long as you’re willing to splurge.

Go past the glass door fronted by the sign 'Keyaki' on the fourth (?) floor of Pan Pacific Hotel and you'll find yourself stepping into a charming Japanese garden, complete with a pond filled with koi. You can choose to dine inside the classy, air-conditioned restaurant, or enjoy your meal outside with the great cityscape view.

The interior of the main dining area is divided into two sections- one for diners seeking a teppanyaki fix, and the other for those planning to order other dishes. So if you're planning to order mainly grilled dishes, do request for a seat in front of the iron griddle and enjoy the novelty of watching the teppanyaki chef fry up your food.

We started off our meal with a platter of exquisitely-presented sashimi, adorned with daikon slivers that served as a palate-cleanser. I particularly enjoyed the sweet and succulent hotate sashimi! I think this costs $45++.

We too ordered a set lunch to share ($58++), comprising of salad, seafood tempura, seafood teppanyaki, rice, miso soup and fruits.

The tempura course featured a humongous prawn, one shitake mushroom, eggplant, julienned carrot and a piece of fish. Encased in feather-light and flaky batter, they were fried to a crisp, golden perfection. (On a side note, don't you find the substandard, oil-logged tempura sold in many food courts disgusting?) The star here was the Ebi tempura which had a lot of bite!

In addition to salmon and bean sprouts, the teppanyaki course also included two pieces of prawns and scallops that were simply divine. The very thought of their flavorful juices perpetually resurfaced in my mind for the rest of the day, and even haunts me as I compose this way overdue review...

My dining partner and I also sought recommendations from the chef and subsequently ordered Hamachi and Kanpachi sushi ($6 and $7 respectively) as the two types of fish were freshly flown in that day.

The freshness of the fish was highly commendable, and the moist, fluffy rice grains blew me away! The top-quality short-grain rice, flavored with a balanced vinegar to sugar ratio, were definitely the most memorable part of the meal.

Boy I'm really glad that I chose to have a bowl of rice instead of udon or soba... Keyaki's rice is superbly delish! But the best way to enjoy it here would be to have it moulded into an elegantly-shaped sharidama, with the rice grains packed to the perfect firmness, and topped with a thick slice of fresh sashimi.

We ended off the meal with sweet, juicy slices of melon and watermelon.

The service was brisk and very good. The kimono-clad waitresses were attentive but unobstrusive, polite and helpful. A walk around the garden made a great ending to the pleasurable lunch outing.
