Looking through the menu you realize that you get to pick your soup base. Be it, Shoyu (soy sauce flavour), Miso (soybean) , Shio (Salt flavour), or Kara-Miso (spicy soybean at $1 more).

The dining area of Ramen Santouka is a rather elongated one, that stretches into the kitchen. The chef is able to see every customer who walks in and walks out. And for every customer that walks out, the chef will say thank you for patronizing them. It is very typical of Japanese ramen shops in Japan to be small and compact, so that the chefs are also able to witness the customer's experience with their ramen.

I went with my lone favourite Miso. I admit, the bowl looked small, but it was deep. After my first few dips with my chopstick, I realized I was looking at the chance of skipping Beard Papa for desserts later! The broth itself was thick and you could see a thin layer of oil swimming on the top. It wasn't too gerlat, as much I managed to drink quite a bit of the soup.

The noodles are the winner here. They are extremely springy. Similar to that of maggie noodles and yet without the waxy exterior that instant noodles give you. The texture of the noodles were consistent throughout the entire serving.  The bambo shoots here were also crunchy and since they absorbed all the flavour from the soup, they sure were tasty!

The two glorious slices of char siew weren't fatty at all. Instead they were tender pieces of juicy meat, that again, absorbed all the goodness from the soup.

I enjoyed my bowl of ramen as it didn't have me craving for water like the ramen from other competitors which are ladden with MSG leave me.

This is my first visit to the restaurant as the ramen outlet is very strongly recommended.We ordered the Tokusen Toroniku Ramen or Pork Cheek Ramen. Believe this is their signature dish. We ordered the Tokusen Toroniku Ramen or Pork Cheek Ramen. Believe this is their signature dish. The Toroniku Cha-shu toppings are served separately from the ramen. Their are about six or seven slices of pork cheeks. The plate of pork cheeks that i got has got a mixture of lean and fat meat.

The first bite into the meat was heavenly. It is so succulent, tender, soft, smooth and moist. The texture of the meat is so fine that one can say it melts in your mouth. It is so smooth that it is fibre free without much chewing. The spices and the stock that it is cook with just burst onto your tongue.

The ramen and the broth was excellent. Most of the places where I eat ramen it is customarily that I do not finish the broth. Not so at this joint. The bowl was left high and dry. The richness of the pork broth combine with the texture of the ramen makes it an excellent combination. There is no high concentration of msg in their broth.

Throughly enjoyed my first time here and it is definitely good for subsequent visits.
題外話/補充資料: Currently they are having a one for one promotion.

I ordered the Spicy Miso Ramen - pork broth with a hearty, rich miso paste, medium-sized wheat noodles, bamboo shoots and jelly ears - the Cha Shu (pork) is made from one certain part of pork back ribs where the meat and fatty portions are well balanced. I added a braised egg.

While the broth, noodles and Cha Shu were rather tasty - the latter lovingly tender as well - we were not very impresed with the Ramen at Santouka. The broth was not spicy contrary to its name and colour. I had to sprinkle a lot of chilli powder on my own to bring out the spicy taste. If one does not want spiciness, the broth itself actually tastes rather sumptuous. It was rather greasy though.

The Roasted Pork Cheek ($19.90) with a bowl of ramen was apparently a popular dish so I decided to go with that the other day. Indeed, the slices of Roasted Pork Cheek were lean and yet so very tender. There was no fatty meat at all yet it tasted so soft and delicious. I took shoyu because I wanted to try something different from my usual shio. Shoyu was definitely more salty than shio and I think I would stick with shio the next time I come around.

So the next time I came I ordered the Char Siu Ramen ($17.70). We both opted for Shio Ramen this time.

The slices of char siu were definitely more fatty and marbly as compared to the Roasted Pork Cheek. The char siu was still delicious and well-braised but you would not fancy it if you did not like fatty meat. I am not much of a fan of fatty meat so I would prefer the Roasted Pork Cheek. The Shio soup base was also lighter than the shoyu soup base.

This cozy little outlet at The Central serves fantastic Pork Cheeks! Their ramen comes in ‘sizes’, hence if you have a big appetite, you can order the ‘L’ size ramen. I ordered the ‘S’ size ramen and portion of the ramen and pork cheeks are pretty generous. Each slice of pork cheek is well marinated and really tender. However, at times, the pork cheeks are ‘fattier’ and one might find it a little oily. But thankfully, my bowl of spicy ramen and pork cheek are perfect!

I absolutely love the pork cheek ramen here. The texture of their pork cheeks are so soft and tender, and the flavour is simply stunning. As for the ramen, I love the texture too. It's firm and chewy, which is just how I enjoy my ramen. Also is not too eggy, which is good.

Last visit, had the cold ramen, and it felt a bit strange cause I'm not really used to eating cold ramen noodles. But the flavours were still definitely there... and I loved the pork cheeks and the soya-based sauce that the noodles were cooked in. Would have been nicer if it were warm though.

Santouka is consistently touted as one of the best ramen places in Singapore and its popularity was clearly evidenced by the queue that was forming when I went there for dinner. Despite the crowd, service was good as the staff were efficient without being brusque. This really is a get in, eat, get out sort of dinner though so if you're looking for a more relaxed pace, you're better off elsewhere. It really is all about the ramen at Santouka. While Santouka really does serve up a good bowl of ramen, I do think there are better ramen places out there. I've learnt, though, that ramen preferences can be very subjective. So while I found the ramen a bit too chewy on the chewy-springy spectrum, some of my other friends loved it. And while I thought the broth (the Shio broth) was super tasty, some of my other friends thought it was a bit too rich and salty.

But we all did agree that the egg was tasty, though the yolk a bit too gelatinous. And the pork cheek was fantastic and and just the right proportion of fat. The portion is quite large though. So if you're ordering the pork cheek ramen, I would recommend ordering the smaller portion if you don't have a huge appetite.

Ramen Santouka has different soup bases for the ramen, like shio/shoyu/miso/spicy miso, and they come in three sizes! i love that. i chose the smallest size shoyu ramen ($12.50), and it was just the right size for me! (: loved the robust broth and springy noodles, and i was so full after that! and i loved the tamago!!! it was so delicious *drools*. it's really the very well-executed japanese egg which is slightly more than half-boiled inside (maybe 3/4? haha) so that the yolk is still gooey even

Specially went to try out Santouka's famous pork cheek ramen. Indeed, it live up to its name! The ramen were authentic and the soup base is good too. eating this makes me feel like I'm back to Japan. The main highlight is actually the pork cheek, which literally melts in my mouth!! too awesome. The noodles were very chewy too. Added a chawanmushi too and the steam egg were nicely flavored. Since we have been to Santouka so many times before (but not recently), my hubby assumed that the menu has not changed. Hence, he just sat down and ordered 2 bowls of shio ramen with an extra egg each - our regular and favorite order. Now, I was at the ladies so I couldn't provide my input. Later, once I'm back at my seat, he said, "Funny, the waitress asked me if I wanted a regular or large bowl". He thought regular should be what we've always had and that the large bowl might be an up-sized version so he ordered 2 regular bowls. We quickly flipped through the menu to check and realized to our horror that the new "regular" bowl is actually a smaller version! In fact, the "large bowl" is the regular size we were used to, but the price for it has now increased. Perhaps they offered these 2 sizes so they could make changes (i.e. price increases) to the menu? Since my hubby made the order about 2-3 mins ago, we frantically waved to the waitress to get her attention so that we can make changes to our order in time.

The waitress came over and indicated that she'll take the order from the next table first even though we were rather anxious. Well, after that, she then entertained our request to make the changes to our order to the large bowls. She went back to the chef, then came back and told us that "The chef has just started to cook your order, you cannot change it anymore". Now, that's why we wanted her attention so urgently earlier! If she just spared a few seconds to listen to us and make the change first, then this wouldn't have happened!

My hubby was angry because the two tiny bowls of ramen were not enough for us. Granted, the taste of the ramen was as good as before - it's one of my favorite ramen stalls. However, that cannot compensate for the bitter aftertaste we have in our mouths from the bad experience with the waitress. I'm hoping this is a one-off situation. I'll probably give it another try when I'm in a more forgiving mood.

Many of my friends have been raving about Ramen Santouka for the longest time ever, and so I decided to give it a try when I was at Central. A bowl of ramen costs about $14, pretty standard, and the portion was also alright. I chose the shoyu ramen, in which the soup base is made from pork broth and soy sauce. It was a little too salty like most ramen, but it's comparatively better than certain stalls in ramen champion at bugis. Didn't like it that they don't include tamago (egg), and you'll have to add on for it.
