I absolutely love the Marche concept which is alot like our hawker centres - you walk around the different stalls and queue up for the food you want, then bring it back to your own table. Pan-fried Salmon: The raw salmon pieces were displayed at the seafood stall counter and the colour of the meat was nice and it looked very fresh, which was what tempted me to order it. However, once cooked, the meat was slightly dry. It might have been slightly overcooked by the chef. Also, the salmon skin could be more crisp.
Paella: Paella is Spanish rice cooked with an assortment of ingredients, and saffron. The version that Marche has is mixed paella, with red capsicums, tomatoes, celery, prawns and chicken. The paella was ok..the rice was nice and moist and mildly flavoured. The vegetables were cooked till they were soft.
Pork Knuckle: This was huge! I think this could serve about 8-10 pax. After chopping the pork knuckle up, the pork pieces fill up 2 plates. The meat was nice and tender. However the skin could be crispier.
Vegetarian Pizza: This was quite nice with onion, tomato, capsicum and arugula/rocket leaves. The pizza base was a bit floppy, such that if you held up a slice with one hand, the pizza will droop down and the ingredients might fall out. I wish it could be crispier.
