chopped herbs, garlic, salt and pepper, and olive oil and seared all over on high heat, let rest a few minutes, and serve. A lamb chop is such a lovely tender cut of meat not to be overcooked. My hubby preferred medium well for his lamb chops. Serve with some French Fries, celery roots and carrots. Topped with mint sauce which is less violent in flavour but exceptionally good.
