My friend recommended me this place for Ramen and I was excited to try because I love finding out new delish Ramen places. I had the Kurobuta ramen (which has a limit of 20 bowls a day!) in shoyu sauce and I topped up the order with one of their flavoured eggs). The ramen is good! The broth is very thick and quite salty and the ramen was cooked just nice. The pork is delicious...so soft and tender! I could eat another 5 slices! We ordered a pork katsu to share. I wasn't very impressed with it as I think the katsu at Tonkichii are better. Not hot enough and certainly didn't have the right crunch.

Hokkaido Ramen Santouka is a Japanese ramen chain, started by Hitoshi Hatanaka in 1988, in Asahikawa, Hokkaido. It all began because Hitoshi Hatanaka was not satisfied with the taste of a ramen he had at a ramen shop. Hence, he used his own recipe and started off small with only 9 seats and one item on the menu. Today, almost 25 years later, Hokkaido Ramen Santouka operates 54 ramen restaurants worldwide in Japan, Singapore, Hong Kong, Taiwan, Malaysia, Indonesia, Canada as well as United States

So what made them so successful? Read on to find out.

Visited the outlet at Orchard Cuppage Terrace, next to OG Orchard Point and Centrepoint. Although it was a weekend afternoon, the restaurant was only half full, with plenty of seats available. There were more seats available outdoors compared to indoors (where it is air-conditioned).

The Chawanmushi; steamed egg pudding with salmon roe was impressive. It was very smooth and wobbly. In terms of taste, it was amazingly aromatic and tasty! One of the better Chawanmushi I have had. Reminds me of the one from Shin Yuu Japanese Restaurant.

I ordered the Shin-Aji Shoyu Ramen. The ramen (noodle) was quite good. Thin, curly and chewy with a smooth texture. More the ramen was springy (QQ) springy and not soggy. The broth was clear, rich and robust. Light brown in colour because soy sauce was used (hence the word 'Shoyu'). It was so aromatic with sweetness and saltiness well-balanced.

Three big pieces of Char Siew were given. They sliced at the ideal thickness for me to get a good bite on it; not too thinly sliced. The Char Siew was incredibly tender with the right ratio of meat and fats that provided it with a melt in the mouth sensation. The bamboo shoots were crunchy providing a good texture to this bowl of ramen.

The Flavored Egg / Ajitsuke (Hanjuku) Tamago / Japanese Runny Egg was perfectly cooked. Firm on the outside and yet inside, it was so soft with almost all its yolk (molten) oozing out. One of the best I around here in Singapore. If you are wondering how you can make this on your own, click here for the recipe.

All in all, the Shin-Aji Shoyu Ramen was well executed All the ingredients used in it were superb! It was a joy savouring and slurping this bowl of ramen.

The partner ordered the Awase-Aji; a mixed soup ramen, served with a bowl of Japanese rice topped with crunchy fried bits had a combination of salt, soy sauce and soybean in its broth. After finishing the ramen, the Japanese rice can be added into the soup.

After this meal, I know why there has been so many rave reviews of Ramen Santouka. It's ramen is truly outstanding. Looks like this is the Best Ramen in Singapore thus far. It overtakes Nantsuttei (Parco Marina Bay) as my favourite Japanese Ramen restaurant. Forget about Ippudo and the Ramen stalls at Bugis+ Ramen Champion in the meantime. Ramen Santouka is the place for a decent bowl of Japanese ramen!

The last time I was here to eat, it re-defined my standards for ramen forever. For starters, ramen from A***** became blacklisted in my mind, because I can pay a little more to eat the best. This place also beats other ramen restaurants with its very Japanese feel interior. This time, the food was just as good. But the staff lacked energy. Don't get me wrong. This time, the food was just as good. But the staff lacked energy. Don't get me wrong. I was pleased with the service, and the speed of the food coming out from the kitchen. But when I was here the last time, all the staff spoke, and behaved like Japanese. They were probably Japanese. Recent labour crunch probably forced them to hire other nationalities, so the Japanese feel was kinda missing.

I had a small set of their Kurobuta Toroniku (pork cheeks from black pigs) set. It didn't disappoint. The pork cheeks was cooked just right, soft, tender, and very moist inside, with a sweet aroma.
The most important part of ramen is the soup for sure. I had Shoyu Ramen to go with it. Just the right level of saltiness, with a good flavour. I guess they used some meat/chicken stock to make the soup, with allows it to go well with the pork cheeks.

One of my friend had Char Siu Kara Miso Ramen. The Char Siu simply melts in your mouth, thanks to the pork belly fats.

Pork Gyoza was shioks to the max. Crispy bottom. Juicy centre. Hot. Fresh. As you can see, I didn't have enough will power to stop and take a photo before we all eat.

We decided to be adventurous and tried sake. I had sake for the first time. Tastes like vodka with some sugar.

For $14+, you can get the mixed soup ramen, Awase Aji Set. It comes with a piping hot bowl of ramen soup with egg and cha su, a bowl of rice, Japanese pickles and hot cup of genmaicha (japanese brown rice tea). What is the bowl of rice for After slurping up your ramen noodles, the remaining pork broth soup can be mixed with the Japanese rice provided and it really tastes sooo good. The creamy pork soup broth really complements the chewy japanese rice! The soup broth is not overly salty too, their miso ramen has the saltiest soup broth.

The ramen is also divine. The springy ramen noodles also went well with the soup and thick, tender slices of cha su were also provided. The soup broth for some reason seems rather oily, there was a layer of oil over the soup and the health conscious might be alarmed by the sight of it. But I didn’t really bother about it too much, just went ahead to slurp up the creamy, fragrant soup broth. One inconsistency I noticed was the eggs provided. The first time I went, the egg yolk was not runny enough, it was probably overcooked. There was an improvement in my second visit, the egg yolk was more runny and was oozing out all it’s yolk goodness.

Hungry people will definitely enjoy this meal. It was really satisfying and filling, especially if you manage to finish the noodles, rice and soup. Wash the jerlerk-ness of the meal away with the genmaicha provided =)

Service is perfunctory, the bowls of ramen are usually served out fairly quickly. Do note their lunch hours end at 3pm and they literally close at 3pm. In my first visit, I entered the shop at around 2.45 and we had to finish our ramen by 3. The staff dropped hints like turning off some of the lights and air conditioning, leaving us with a rather negative, unenjoyable experience. I was literally perspiring from trying to finish my ramen. =(

I liked how the egg white was solid and the egg yolk was a thick golden liquid. The rich taste in your mouth is fantasticThe soup was fantastic too. I forgot what my order was, but it came with a bowl of rice, and you are suppose to mix it with the soup after you are done with the noodles. This part was good too, but could be better if those crunchy bits on the rice are more crunchy.Service was good.
