There are two types of porridge, the Teochew and the Cantonese. Teochew porridge is more like rice with excess water. A good congee is one that is fine, smooth and easily swallowed, without having to chew.I could say that the congee from Yong Xi

I could say that the congee from Yong Xin fitted very well in the above description of a good congee.
Today, I went to West Coast Market Square and ordered two bowls of congee from Yong Xin, one fish and one chicken. I requested to add an egg to each.
When the piping hot congee was poured into a bowl with a raw egg, I quickly stirred the mixture. I like the eggyolk stirred into the congee. Usually, some 'you tiao' would be added to the congee, but for this stall they gave me a whole half of a 'you tiao'. (pls refer to picture)Hmm... perfect.
Must try!
