1. Cut the roots of the enoki mushrooms. 2. Wash and drain dry for at least 15 minutes. 3. Mix all other ingredients in a bowl. 4. Put dried enoki mushrooms into powder mixture a little at a time. 5. Coat the enoki mushrooms, tear open strand by strand. 6. Heat oil in HCP with medium fire. 7. When oil is hot, put coated enoki mushrooms to fry. 8. Close the pan, leaving a gap to let moisture escape. 9. Fry for 1 - 2 minutes, open pan to check. 10. Use wooden chopsticks to stir & break open any lumpy pieces while frying. 11. Fry till golden brown in colour, remove & put on kitchen papers to absorb any extra oil. 12. Store in air-tight container if you're not consuming immediately.
