



Chef Mamoru Kanaya: I love ramen and when I first arrived in Singapore, I realised that Singaporeans love ramen too. This is the primary reason why I decided to create my own interpretation of this dish for everyone. ‘Buta’ means pork in Japanese and since that is the main ingredient in my ramen, I came up with an attention-grabbing name that is both unique and memorable.

Chef Mamoru Kanaya: My flavourful tonkotsu broth is achieved from boiling for 10 hours, pulling out all of the flavours from the pork bones. Also, instead of using chashu, I use pork belly as it is more tender. My ramen is slighty sweeter compared to other restaurant’s ramen soup bases.

Chef Mamoru Kanaya: I realised that most customers come to Ramen Champion during the weekends so I’ve decided to create a limited edition ramen just for the last Sunday of every month for them to enjoy. I draw inspiration from everywhere, the people I meet, the places I’ve been to and the food I’ve tried in Singapore and Japan. Which celebrity would you love to cook your special ramen for?
Chef Mamoru Kanaya: Namie Amuro. She’s a famous Japanese pop star. Whenever she visits Singapore, she will head to Ippudo for ramen. I hope she will come to me instead during her next visit!
