Black Sesame Soy Bean Chiffon Cake

Ingredients 4 egg yolks 5 egg whites 35g sugar 40g olive oil 80g soy bean milk (unsweetened) 10g black sesame paste 110g flour 3g baking powder 35g sesame powder Whipped cream and Christmas cake toppers to decorate, if desired Directions 1. Prepare a chiffon mould. Preheat Bosch oven to 170°C. 2. Sift flour and baking powder together twice. Set aside. 3. In a large bowl, beat egg yolks and sugar until thick and creamy. Gradually add olive oil, soy bean milk and black sesame paste while beating until well-mixed. Add flour mixture and continue beating until mixture is smooth. Set aside. 4. To make the meringue, whisk egg whites gently until mixture is foamy. Using the Bosch MaxxiMUM Sensor Control Kitchen Machine, gradually add sugar and whisk until soft peaks form. 5. Spoon one-third of meringue into egg yolk batter and mix gently with a rubber spatula until incorporated. Add the remaining meringue and mix well. 6. Pour batter into chiffon mould. 7. Bake for 30-40 minutes until a skewer inserted into the centre of cake comes out clean. Remove from oven and place mould upside down. Let cake cool completely. 8. Run a knife around the sides and base of mould to release cake. 9. For a festive vibe, pipe whipped cream onto the cake and decorate with Christmas toppers.
