Diamond Kitchen: Seafood Gem Opens in the West

A year after Diamond Kitchen opened for business to glisten in the East, co-owners Josh and Lambert have taken their seafood venture to the West with a second outlet housed in Science Park I. Located in The Oasis (formerly known as Science Hub) amongst other eateries and a gym facility, Diamond Kitchen stands out with an entrance lined with glass tanks full of live fish, shellfish and crustaceans. When we visited on a Tuesday afternoon, the restaurant’s main dining hall was a bustling sight with a clientele comprising mainly of those working within the hub itself.

7-Course Diamond Seafood Signatures Menu

Besides the same full menu reprised from Marine Parade, those who dine at the Science Park outlet have the exclusive option of a newly launched set menu. Available till 31 July, the seven-course meal ($88++ per person) gives you the opportunity to try their seafood signatures at a fraction of the a la carte price. See also: What to expect at Diamond Kitchen's Marine Parade outlet It starts with crunch time – a plate of Shredded Chicken Salad with Abalone comprising celery, carrot, black fungus, red chilli, poached chicken and a whole Australian abalone – which makes for a light and refreshing start before the next “flavour-powerful” dish. We’re talking about Garlic Steamed Bamboo Clams (pictured above). Topped heavily with crispy fried garlic, the Scottish bamboo clams are accompanied with glass noodles, enoki mushrooms and water chestnuts soaked in a house-made Hong Kong steamed sauce that teems with umami. Easily a garlic lover’s Holy Grail.

To the fish connoisseurs who are familiar with the Giant Grouper, you would know just how much of a delicacy this fish is. Weighing a hefty 20kg and portioned up to 30 parts, a ton of skill is required for its preparation, which explains why only 2 or 3 restaurants in Singapore currently serve it. Unique to the giant grouper, is its exceptionally thick, gelatinous and collagen-rich skin – ladies, you’ll love this. Between your two choices of execution: Hong Kong Steamed Giant Grouper (pictured above) and Superior Claypot Giant Grouper, we recommend the former. With almost equal amounts of meat and skin, the steamed giant grouper belly goes well with the Hong Kong steamed sauce that has been brewed with a top-grade soya sauce.

What follows is a hearty claypot of Lobster Porridge (pictured above), befitting the “rainy weather food” category. The lobsters (750g small, 1.3kg large) are steamed separately from the “pao fan”, which consists of chicken stock, Chinese wine and ginger. You won’t find this dish in the a la carte menu but we’ve been told they take requests! See also: Useful list of seafood restaurants Other dishes on the set menu include Stir Fried Sweet Potato Leaf with Salted Fish – undeniably exceptional with lard, Diamond Kitchen’s signature Gan Xiang Crab – a fiery finish – and finally a bowl of sweet and tangy Lemongrass Jelly to tame those spiced up senses. The Diamond Seafood Signatures set menu will be offered only at Diamond Kitchen Science Park at a promotional price of $88++ per person (usual $150++) from now until 31 July 2015.
